Good morning and Happy Monday! The sun is shining today, and I’m in better spirits :) Thanks for all the Happy Anniversary wishes, so nice of you all!

Yesterday evening Ben and I got severe cabin fever so we went to Borders to look around for awhile. Then we headed over to Chipotle, got ourselves some burrito bowls and brought them home to eat. I started eating Chipotle in Minneapolis, and let me tell you, it is just fantastic. All the ingredients are completely fresh, unprocessed, family-farmed, sustainable, organic and 100% delish! My only gripe is they give you enough to feed a small army – or if you’re me, enough to feed you twice! I ate half my portion for dinner, and am eating the other half today for lunch. My burrito bowl consists of:

  • Rice
  • Black beans
  • Tomatillo Green-Chili Salsa
  • Fresh Tomato Salsa
  • Chipotle chicken

It was so fresh and had so many bright flavors I definitely could have eaten the whole thing, but that would not have been a very wise decision ;) My favorite items in this bowl are the Fresh Tomato Salsa, which is packed with cilantro, and the Chipotle chicken which is really smoky and charred. For lunch I also packed a crispy, sliced Braeburn apple.

This morning I had hmmmm, yep – the best bowl of oatmeal I’ve ever made! Super creamy, sweet, exotic and crunchy due to the following ingredients:

  • ½ cup Oats
  • 1 cup Milk/water
  • 1 medium banana
  • Generous sprinkle of Cinnamon
  • Splash of vanilla
  • Toasted almonds
  • Toasted coconut
  • Maple syrup (star ingredient!)

I miss this bowl already, it was so good!

I totally slacked off on working out and running in the second half of last week – darn! This is going to be an insane week in terms of things I need to get accomplished, but I’ve got to make working out a priority. I find the longer I go without working out and/or running, the harder it is to get back into a routine. I’m kicking off my routine with a walk during lunch today – yes!

Do you all have a workout routine you like to stick to? How do you feel when you miss workouts or fall out of your routine?

    I used to have that same problem with working out. First, I started going to classes. Step aerobics, spinning, weight training classes etc. It REALLY helped keep my motivation up because I knew I HAD to be there at a certain time. That worked for about a year and a half and then my motivation for that started waning so for the last four months I’ve been training for a half-marathon. It’s been GREAT motivation to get all my runs and workouts in because I’m “in training”! I’ve also been amazed at what my body can do :-)

    I just found your blog through eatlikeme…love it! :D

    As far as working out, I do have a general routine to follow, and like setting goals for myself to keep it interesting.

    If I miss workouts just because, I feel guilty and tell myself that’s not a good excuse.

    If I miss because of a really busy workload, or being sick, I cut myself some slack.

    And sometimes, rarely, I just get *tired*! And in that case, I give myself a couple days off to recoop until I’m dying to run again. :D

    But I think rest days are so important, and we all need them from time to time. What matters is the overall balance of exercising most days and eating right. Sometimes I’m still learning that lesson! :D

    Amber: I used to do classes too – I always met a friend there so we had to go, otherwise we were letting each other down! Hope your half marathon training is going well! I used the Hal Higdon training schedule – it was great!

    Sarah: Thanks! I completely agree with you about goals. If I don’t have something I’m working towards, I tend to get un-motivated. And you’re right – balance is key!

    I like to make sure that I get a run in at least 6 days a week. On a workday, it’s at 5:30 in the morning and I go for about 2.5 miles. By that time, I’m usually running late for work, but at least I got a run in. That makes me feel better for the rest of the day.

    Lately, my interest has been peaked with working out, so I joined a running clinic and a spinning class. My motivation is definitely summer. In Canada the summer is so short that I want to feel fabulous for the whole stretch of it!

    But yeah, if I fall out of routine, it’s so hard to get back in. I was sick over Christmas and it took a few weeks to start doing something active. But it’s sooo worth it when you get back into working out!
