Good evening – how was your day? Mine was suuuper busy and I had to forego my workout for Operation: Get the House Ready for Baby Shower! I came home, swept the stairs and every single room in the house and then mopped all the tile! There is seriously nothing better than a clean house. I’m kind of a germaphobe/clean freak, so I actually enjoy cleaning. Except…that I have a completely irrational fear of cleaning bathrooms. Literally, even cleaning the vanity and sink area makes me gag and run. That’s what brave husbands are for though, right?
What household chore makes you want to run in the opposite direction?
Oh, I actually stopped at Bed, Bath & Beyond before I came home and picked up a couple of Royal Blue Snuggies. Now, I already have a pink Slanket – the far superior version of the Snuggie – so what, you may be asking, would I need two Royal Blue Snuggies for? All will be revealed…in time…!!
For dinner I made one my all time favorite summer meals – Fresh Vegetable Pasta Toss. The mix includes:
- Whole wheat pasta
- Sundried tomatoes
- Zuchhini
- Corn
- Broccoli
- Cauliflower
- Onions
- Garlic
- Chicken Broth
- Olive oil
- Dried Thyme
- S&P



Ohhhh my – this meal is so light and refreshing and summery!! The clear star of the dish was the sun dried tomato – picked up at a farmers market during our recent trip to San Francisco! They were so sweet and chewy – a strong burst of flavor that I tried to include in every fabulous bite!

I will post the recipe tomorrow friends, because you’ll want to include this in your rotation!!
When do you start to make the transition from warm, comforting meals like chilis and soups, to more summery dishes like my vegetable pasta dish and grilling?

My mom makes the best pasta salad, and it looks just like that!!! Such a light, summery meal…I’m definitely craving that now!
And I start switching to the summery foods once it gets hot! The second the temperature rises above the 70′s I can’t handle soups (usually), unless I’m really craving it!! But I feel like I’ll be eating oatmeal all through summer!

I have never ever been an oatmeal eater and I swear you are making me want to try oatmeal. Just wondering if you will continue to eat oatmeal for breakfast in the summer. It seems like a fall/winter breakfast to me. What does Iowa Girl Eats think? Just curious.

Oatmeal is so good – and so easy to make. It really only takes 4 minutes in the mornings…really! This Iowa Girl will most likely be eating oatmeal through the summer. Even if I’m sweating while I eat it…I don’t care!
