Good (rainy) morning!!
I got a text at 5:40 this morning from my mom saying “Raining!” meaning, no walk…I was a little bummed because I had a few pieces fair amount of Easter candy yesterday and I wanted to start the day off right…but I got to sleep in 30 extra minutes – nice!
After Easter brunch yesterday, my mom sent us all pakcing with a nice big hunk of ham (sorry for the visual, vegetarians) and I knew exactly what I was going to make with it…ham and cheese egg scrambles!!! And that’s exactly what I made this morning My breakfast had:
- 1 whole egg
- 2 egg whites
- Splash of water
- 2 oz cubed ham
I added the mixture to a skillet with about ½ teaspoon of butter and a shot of Pam, scrambled that baby up in about 2 minutes, topped it with shredded cheddar cheese – and breakfast was ready in no time!
Seriously…seriously, I love ham. It was so smoky and salty and coupled with the melty cheese and fluffy eggs – it was honestly one of the best egg dishes I’ve had in a really long time (sorry asparagus strata)…and it was made using leftovers! Can’t beat that Served it with a nice little bowl of grapes.
Ugh today, I’m wearing a wool sweater with a three quarter length shirt underneath it, so there’s a quarter of my arms that are in direct contact with the sweater…I can tell this is going to be a problem all day.
Do you ever get to work, look down and think, what in the H was I thinking when I walked out my door this morning? Last week I wore dark denim trousers with a dark denim jacket and didn’t realize it until about 11:00…ahh!! Happy Monday friends!
