On Tennis and Stir Frys

Hey everybody!

I thought it was Friday all day today…do you ever do that?! Darn!

Tonight, Ben and I got our game on…our tennis game on! Ugh, I. love. tennis. It’s seriously an amazing cardio workout – especially if you’re playing with Ben and I, because well, we aren’t that good. But it least we’re not good together! :) There’s something about smacking that little yellow ball as hard as you can that is just soooo satisfying. We only played for 30 minutes but I can already tell my arm/shoulder is going to be hurtin’ for certain tomorrow. I don’t  care – tennis is the best!!! Do you guys like playing tennis?

For dinner I was craving some chewy rice noodles and happened to have some on hand, so I made a Chicken and Broccoli Rice Noodle Stir-Fry!

Ingredients included:

  • Rice Noodles
  • Broccoli
  • Broccoli slaw
  • Chicken
  • Garlic
  • Ground ginger
  • Chili flakes
  • Scrambled egg

The sauce I made to go over it had:

  • Barney Butter
  • Regular peanut butter
  • Soy sauce
  • Splash of water
  • Chicken broth
  • Fish sauce
  • Garlic chili paste
  • Chopped peanut topper

This dish was so cool because the only thing that I didn’t already have on hand and happened to have picked up at the store earlier this week anyways, was the broccoli! As I’ve mentioned, I love stir-frys. If you have a good wok you don’t even need oil! I’ve also mentioned that some of my favorite foods to cook – and eat – is Asian food, so this was right up my ally :D Quick, salty, savory, chewy & deeeeelightful!

Ugh, I have been a snacking FIEND for the past two days!! Last night it was miniature teddy grahams and…miniature marshmallows. Miniature marshmallows, people! That’s when you know you’re snacking just to snack! Today it’s been tootsie rolls and goldfish. Do you guys ever get like that? What do you do to stop the snack attack? Usually I chew gum or something, but it’s not working :( Oh well, there are worse things I guess!

    Wow, that looks like one delicious dinner.
    I get into the snack attack sometimes too, and it can be hard. Chewing gum doesn’t seem to help either. I just… give in. LOL

    Tennis is SO much fun! Now that the weather is nice I want to start playing more often. I loooveee mini-marshmallows for snacking — I always grab some at my parents house.

    I would like to play tennis. I think I’d enjoy it. My mother does not play tennis, but is an avid fan of Wimbledon and the U.S. Open. During those two tournaments, she will watch TV all day long. As a result, my father and I dread Wimbledon and the U.S. Open. :-) Twelve hours of tennis is a bit much for anyone.

    Once in a while I give in though!

    Tennis sounds like fun! I should clean out the garage and find our tennis rackets… there is a court in our development!

    I love snacking … but lately I’ve had to draw the line. My “bad” time is when I’m cooking dinner. Something about being home after work and just being in the kitchen gets me. It’s a handful of this, a handful of that, and then the next thing you know I’ve ruined my appetite.

    We have a tennis court next door – we’re not very good either (probably since we NEVER play tennis), but those are always the most fun cardio workouts.

    I love this post! You have combined some of my favorite things :) I love to play tennis (I am not very good either…) and I absolutely LOVE stir fries. If I weren’t living with my parents right now, I would have stir fry every day :p
    I have also been guilty of snacking on mini teddy grahams and marshmallows – they are a great combo in my opinion!
