Chicken Tender Love

Oh, dear me – I’ve just had one of the best dinners ever!

I took inspiration from Love and Olive Oil (amazing website, btw – look at THIS!) and their recipe for Baked Panko Chicken Tenders  – check theeeeeese babies out:

The smell coming from the oven as these baked was incredible! Lets back up a second, shall we? I used a three step approach when making the baked, panko breaded chicken tenders:

  1. Dip chicken tenders in flour, seasoned with S&P. Shake off excess flour.
  2. Dip tenders in 2 egg whites whisked with a splash of soy sauce & water.
  3. Dip tenders in panko bread crumbs seasoned with: S&P, garlic powder, onion powder, chili pepper, paprika, dried parskey and dried mustard.

I then placed the tenders on a foil lined & non-stick sprayed cookie sheet, baked for 6 minutes then flipped and baked for an additional 6 more. The result? Perfection in chicken tender form! No need to ever order chicken tenders at a restuarant again – you’ve got a delicious, HEALTHY, easy alternative with this recipe. Mmmm, I seriously wish I had more – we ate all of them though :( A note on Panko bread crumbs: you’ll find them right next to the other bread crumbs at the store. They get super crunchy and crispy and are absolutely perfect for when you want that “fried” crunch, without having to fry anything!

I was looking for something to serve with dinner and my eye fell on a lone box of Jiffy corn bread in the pantry. Really, is there anything better than old school Jiffy corn bread? I’m certain there’s not! I also had a small dish of BBQ sauce to dip my tenders in. I didn’t use much though – the taste of the tenders by themselves was spot on.

Oh, HOW could I forget? My mom called me on my way home today to tell me that mangoes were on sale at the store near my house – 2 for $1, sweet! Guess what popped into my head? Blended mango smoothie! So smooth, so creamy, so sweet. 1 mango, splash of water, sprinkle of sugar – whir that baby up in a blender and you’ve got a delicious, tropical dessert in no time :)

By the way guys – I loved hearing about your favorite jobs today. Seems like the people you work with really make a good job, that much better. I completely agree with that!
