Happy Friday!
It’s started raining here around 6:05am – precisely the time my mom and I walked back up my driveway after our walk! The rain can’t dampen my mood though – it’s Friday!
Did anyone happen to catch The Office or 30 Rock last night? I was watching in between loads of laundry – and I thought these were two of the best episodes of the season…soo funny – Tina Fey is my personal comedic hero…what a gem!! Catch them on hulu.com if you didn’t see them
For breakfast I was feeling a little sassy and decided to place my figs in the shape of an “F” for Friday to honor the great day that it is!

Amazing combo as usual:
- 1/2 cup old fashioned oats
- 1/2 cup milk
- 1/2 cup water
- 1 medium banana
- 4 chopped up figs
- toasted almonds
- toasted coconut
- sugar-free maple syrup drizzle

I ate this with a smile on my face and savored every delicious bite. There is truly no better way to start the day!


For lunch I packed a mish-mash of items:
- Lemon AE Dairy yogurt
- Cocoa Roasted Almonds
- Sliced Braeburn Apple
- Crunchy Barney Butter for dipping
- Fruit salad





Super jazzed about the fruit salad. I had some last night for a snack and all the fruits are at their perfect stages of ripeness
Shout out to my Mom for cutting up her first mango yesterday! She said it was tough, but well worth the effort
Shout out to my Dad for letting her know that the pit/seed in the middle is very large and she’s not crazy.
Third shout out to my beautiful friend Natalie who is running her first half marathon in Colorado this weekend! This girl is BRAVE! I could never handle that distance at a high altitude! Natalie is a true athlete though, and I know she’ll do GREAT! Here she is in all of her Snuggie Glory:

Final shout out to all of your amazing smoothie recipes yesterday – I am definitely keeping these in my repretoire!!
So excited for the weekend guys!! One of our main, local Farmer’s Markets is opening tomorrow so my mom and I are getting up bright and early to go. Then, of course, it’s the Kentucky Derby on Saturday afternoon – I think Ben and I might hit up our local racetrack for some Mint Juleps
Maybe I’ll make up a recipe for a healthified Mint Julep…I’ll let you know if I do

I WISH I could go to the Kentucky Derby!! This weekend I will be working/studying for finals…
I love your friend’s snuggie picture! That’s awesome. I can’t wait until produce become a bit cheaper in a month or so here in NYC. My fiance and I will be catching bits of the Derby as we pack up my belongings this weekend in Phildelphia as I move to NYC full time!!!!

The story about the mango, your mom, your dad, and the pit was hilarious! I felt the same way when I broke open my first mango, though my first one wasn’t ripe enough so it was a bad experience. NOW I know better!
No huge plans here … a possible greenhouse visit for some seeds, herbs, and whatnot, and a possible farmer’s market visit (if I can talk the husband into it!).

Delicious breakfast! i don’t get to creative with my oats. My favorite oat topping is Nutella.
I made my first cooked oats!!!
I used:
1/2 cup unsweetened almond breeze
1/2 cup water
1/2 cup Roger’s porridge oats with band and flax
straberries
maple syrup
small amount of milk

This weekend I’m helping my sister pick flowers for her wedding, and I’m working, I can’t complain though I’ve been off since tuesday
