Fall Dessert Comeback

Happy Hump Day!

I know you’ve been waiting in suspense to see what I had for dessert last night ;) . Well I had four dried apricots and after I ate them, I really wished that I had some chocolate too. Well guess who had to stay late at work but totally redeemed himself by bringing me the exact item that I was craving?! Ben, bearing gifts of 2 mini Reese’s Peanut Butter Cups and a Rolo! Bless his little heart :)

These were exactly what I was craving and I happily ate them while watching the Biggest Loser contestants ALL finish a MARATHON! I cried. It’s true. When Ron rolled in after 13 hours of walking with a cane, surrounded by all his competitors and past contestants – Mikey waiting, crying, at the finish line – I lost it. Then when he struck down the finish line tape with his cane…oh it was magical! Anyyyyways…!

It’s a fact that my absolute favorite fall dessert is Apple Crisp. Last fall I kept a bag of the dry ingredients for the “crisp” part pre-made and on hand, so I could make little individual crisps whenever I wanted – all I had to do was add a little butter, cut up an apple and bake. Well, 4 pounds later I ditched the habit, but kept the love. This morning I rekindled that love with Apple Crisp Oatmeal! Why, oh why, didn’t I think of this before?? It tasted exactly like my favorite dessert, minus all the flour, butter and excess sugar – perfect!

All I did was peel and slice an apple and added it to my oatmeal, milk and water as it was cooking. After it was done, I added a teaspoon of brown sugar, splash of vanilla and some cinnamon, topped with toasted almonds and coconut – and Fall was back, baby!

So delicious…I’m salivating…

For lunch I packed a salad with my leftover tostada ingredients. Lettuce, tomato, a sprinkly of cheese and spiced black beans – with a little lite ranch dressing.

Plus a banana with Barney Butter for dipping, natch.

Looks like the rain fairy has come to pay us a visit, so a trip to the gym might be in my future tonight?!

Do you guys cry/get emotional over television shows? Normally, I don’t, but when it’s real life like the Biggest Loser and you can see how far these people have come – it’s a little heart wrenching, you know?!

    Delicious oatmeal! I keep baggies of crisp topping ready to go, in the freezer, too! I make about one a month with whateve fruit or berries I have on hand/seasonal.

    I cannot help but tear up at the biggest loser. that moment when mikey was waiting. ahmazing! it was so good! i cannot wait to see how everyone looks next week!!!

    i love apple crisp, my mom always skimps on the topping! I’m like MOM! but i only make it once a year it appears. don’t know why though!

    Biggest Loser last night…. Justin and I both lost it!! It was sheer magic when Ron hit that finish line with his cane. AUGH!!!!

    I cried like a baby during the Biggest Loser last night too. The marathon and the trainers helping Mike’s brother, Max really made lose it!

    I was just talking to my mom about The Biggest Loser last night! She also said that she cried as well! I didn’t get to watch it but had I, I would have been a mess, I cry at a drop of a hat and with him going for 13 hours is just incredible. Incredible!

    That oatmeal looks delish. Another recipe of yours that I will have to give a go at! I’m making your lemon pepper chicken tonight, haven’t had the chance to do it yet!

    The Biggest Loser was awesome last night. I loved seeing them all finish and to see Ron with all the support he got. Although, I do worry about Tara and her extreme exercising – that girl is heading down a dangerous path and I hope she takes Jillian’s advice to heart and maintains balance in her life.

    That oatmeal looks delish – I’ll have to try it sometime!

    OK – so this is sooo funny that I’ve been craving Maggie’s cinnamon rolls (my favorite fall dessert.) They’re SO obnoxiously good! But anyhow as I was shopping yesterday – with Mason – his first trip to Hy-Vee!…I found a new Jello 60 calorie, sugar-free pack of cinnamon roll pudding?!?!?! Um…delicious?!?!?! I suggest you try them:)

    Oh I am a huge sucker for those shows. Extreme Makeover Home Edition normally is the one that gets me the post – or sometimes the animal cruelty shows on Animal Planet. But the most, Britney’s documentary – riveting, it gave me goosebumps!

    I have GOT to try that apple oatmeal! Looks amazing!

    I totally got emotional last night! I am not a fan of Ron, but when he crossed the finish line – that was HUGE. I honestly did not think that he was going to finish it. They all did so well. They have come so far and really changed their lives. I find them all to be very inspirational.

      This bowl of oatmeal clocked in around 410 calories – which is about how much I need to keep me fueled in the mornings – after all, they say breakfast is the most important meal of the day! As far as your cereal intake, unfortunately I’m not a nutritionist or educated in any nutritional related area, and don’t know if that is enough for your personal needs or not. I encourage you to look up a nutritionist in your area for more info!

    I am a huge Biggest Loser fan and last night’s episode was awesome. I was so happy and excited when all four contestants finished the marathon and it was such a touching moment when Ron crossed the finish line. I am routing for Tara, but I do hope she takes Jillian’s advice about balance to heart. She is sooo hard on herself!

    I’m curious as to how you maintain your weight by eating such a high calorie breakfast. With the oatmeal, almonds, and coconut, that really adds a lot of calries. I generally eat 1/4 cup of cereal for breakfast. Is this too little?
