Amazing Sandwhich Alert!

You guys, my fresh corn salad for lunch was So.Good. I’m wondering if my fig fetish will be replaced by a sweet corn fetish this summer!? Who am I kidding, there’s room for both!

Per my Hal Higdon half marathon training schedule (with my modification for this week) I ran five miles after work today. It was hot, it was sunny, it was great :) I was thinking more about my schedule for this week and I decided that just because it says I should run a certain mileage a day, doesn’t mean that I can’t run more than that, if I’m able. I don’t want to fall back on my fitness level just because the schedule says so. With that said, I’ve modified my schedule thusly:

  • Monday: 5 mile run
  • Tuesday: 4.25 miles
  • Wednesday: 10×400 5K pace
  • Thursday: 4.25 mile run + strength
  • Friday: 3 mile run
  • Saturday: rest
  • Sunday: strength

Should be a great week!

For dinner tonight, I made something I’ve been thinking about ever since it was suggested by reader Allison after my post on Buffalo Chicken Tenders. She said:

Don’t you love Franks Buffalo??? I’m a die hard Franks Original fan, but the Buffalo is great on chicken – or for dipping grill cheese!

Ummmm, grilled cheese dipped in buffalo sauce?! Yes please! Ooo I was so excited… I lightly buttered two slices of bread, sprinkled them with garlic powder and placed a slice of colby jack cheese on one side. On top of the cheese I placed thin slices of fresh, vine-ripened tomatoes. These were the most perfect, red, beautiful, luscious tomatoes ever. Beautiful!

Then I threw this puppy in a skillet and pressed. Every good grilled cheese needs a good squeeze…it just does. So I got the sandwich nice and brown and crusty on both sides and then cut it in half and served with Allison’s recommendation – Franks Buffalo Sauce. Ummm, this was one of the best sandwiches EVER!! You all need to try this! I absolutely loved the combo of the cheese, garlic powder, fresh tomato and the buffalo sauce – it had the absolute perfect amount of spice for me!

    That sandwich was seriously making my mouth water! My favorite sandwich it def a good ole PB&J but on cold days I love a grilled cheese with tomato soup!

    Great pics of that sandwich. I first had fresh tomatoes on grilled cheese when I went to England. I’ve insisted on them ever since.
    I wonder if there are any desserts you can make using fresh corn. That would be an interesting experiment.

    Please do take pics of that lilac bush. I can’t wait until my neighbor’s row of lilacs blooms.

    I have always added miles at the beginning of a training schedule, I hate cutting back on mileage for only a few weeks.

    And that sandwich looks so good. I have been really enjoying all your meals, and can’t wait to try them. I think your sweet potato fries are now on the menu for tonight. Thanks!

    My mouth is watering from that sandwich… YUM! I will definitely have to try it. I made your sweet potato fries last night and they were a HUGE hit! My son (who is the pickiest eater EVER) gobbled them up! It was greatness!! I didn’t have veggie Grill Mates seasoning but I had lemon and garlic pepper Grill Mates and it was DELISH with that!

    That sandwich looks amazing! I love grilled cheese – it has to be my favourite sandwich. Though lately I’m partial to goat cheese, hummus and spinach wraps. They’re delicious and filling.

    My husband hates grilled cheese but loves hot sauce … maybe I can make him love my favourite with some of his favourite attached. Hmm.

    I made your buffalo chicken strips the other day and they were so delicious! I thought about doing the same thing with shrimp, though part of me is scared those little suckers will just devour the hot sauce and turn out to be little hot shrimps!

    MUFFALETTA. I have been seriously jonesing for one for a few days now. Prosciutto, salami, olive tapenade, mozzarella, pressed on an inside out baguette…mmmm. I also love a prosciutto and mozz sandwich on ciabatta dipped in Italian dressing, or prosciutto and Brie, cold, on baguette. Prosciutto and I are close friends.
