Good morning everyone! I woke up thinking it was Friday…what?? I was very dismayed to finally figure out that it was only Tuesday…dang! It least it’s a beautiful Tuesday
I didn’t get that lilac bush picture on my morning walk. It was a little darker than usual and I want to make sure my picture captures the glory that is this bush – it deserves it!!

This morning I had a bowl of oatmeal that completely justified my love for figs. It was that good. In the mix:
- 1/2 cup of old fashioned oats
- 1/2 cup each of water and milk
- splash of cinnamon & vanilla
- 1 medium banana
- sprinkle of toasted almonds and coconut
- drizzle of sugar-free syrup
- 4 cut up, dried, black mission figs
FIGS - I love you! Sweet, chewy, satisfying – and those seeds. They’re kind of like raspberry seeds, but less annoying, much softer and they PoP in your mouth!


Figs are so great – and not just for oatmeal. They are one of my favorite snacks when I have a craving for sweets and they’re also great for baking! Try them – yes YOU – try them!!

Lunch…I’m sorry people…is a semi repeat of yesterday. I was so happy eating my salad yesterday afternoon (I even twittered about it!) that I had to have it again. It had:
- Mixed Greens
- Snap peas
- 1 corn cob, cut off the cob (left in strips – it’s the best way to eat it!!)
- half a cut up tomato


Mmm…sooo pumped!! And so pumped to hear that a lot of you like eating corn cut off the cob too! We decided it must be a childhood thing. My Grandpa always cut his corn off the cob – it’s actually something that I’ll never forget about him!

I also packed some cocoa roasted, hot chocolate almonds and a sliced Braeburn apple!


Someone asked me if my apple turns brown when I slice it early in the morning. Well I pack it in an airtight tupperware container, so it doesn’t get too brown. But when/if it does – the brown doesn’t affect the flavor of the apple – so slice away people!!!

Mmmm, I haven’t tried figs yet but after seeing them on your blog so much, I just may have to!
Where do you buy them? I honestly have never seen them at the grocery store before because I’ve never looked, LOL!
And my Granddaddy used to cut the corn off of the cob as well! Must be a Granddad thing!

My new fav is yogurt with grape nuts and figs. Very summery! Sometimes some banana or strawberries in it also!

i used to have to have corn cut off the cob because i had a retainer and an overbite as a kid, so to prevent any thing happening, i was not allowed to eat corn on a cob! but now i can!
Figs are fantastic on just about anything – dessert, snack, salads, pork – everything.
That dog is so freaking cute!
A trick to keep your apple not brown once sliced is to squeeze a little lemon juice on it – it’ll keep the brown away!

MMM I love figs. My grandmother had a fig tree growing up. It is almost prime season for them again. I will have to try them in my oatmeal!

You can buy figs at any grocery store – I would start by asking the produce guy/gal if they could help you find them. I ask people at my grocery store where stuff is ALL the time – they like helping
