Summer Grill Menu

Hey guys!!

Whew – I am feeling a lot better right now - I was super stressed all day. Just had more things to do than minutes in the day. What stressed me out even more was knowing that my to-do list after work was just as long. Well, I left work a little bit early, got all my errands done and came home to have an early dinner with Ben. I feel so much better knowing that most everything is done, and I just have 2 more major things I have to accomplish before I go to bed:

  1. PACK! Yep, this girl’s going on a trip! ;)
  2. I’ll show you tomorrow!

Luckily, the type A in me had a handy list made with everything I needed to get done today. I can’t wait to cross these last two things off :)

I am happy to report that it was an absolutely gorgeous day out today - so gorgeous in fact, that a two hour meeting I had this morning, was held outside – nice!! The evening was just as nice, and was absolutely screaming summer to me – so I fired up my trusty grill and made an incredibly easy, fast, and quick to clean up dinner: Grilled Steak, freshly steamed Green Beans and grilled Corn on the Cob!

I seasoned my steaks on both sides with some grill seasoning and let them cook on the grill for about 5 minutes a side. Right next to them, I placed my corn on the cobs and rotated them every 3 minutes or so. The corn was making a hilarious PoPpInG noise the entire time it was cooking and I was certain each time I opened the lid to the grill to rotate them, that I would have popcorn, but nope – it was just the cobs cracklin’ away. :)

While the grill was working its magic, I steamed some fresh green beans on the stove. Look at that steam! I almost steamed my ring finger off, actually…ouch! Worth it though – fresh, crisp green beans are one of my favorite things about summer.

Oh grilled corn on the cob – I love you so much! If you’ve never made corn this way – you’ve really got to try it. There is literally NO cleanup involved in preparing it and the smokey sweet taste is out of this world!

My steak was grilled to perfection and was just as tender as could be – nothing says summer like a grilled steak!

I am perfectly satisfied right now – which doesn’t happen often. I’m one of those people that literally HAS to have something sweet after dinner every night – but that corn was sooo sweet that it’s honestly taken away my desire for a treat…well, for now anyways…

Ok guys, I’m off to finish my last two tasks of the day. Wish me luck!

Question for you: do you guys read a lot of magazines? Which ones are your favorite? Or, do you read magazine content online? I get Glamour, Self and Fitness – and frequent all of these websites too…Just curious!

    I love magazines– I get Fitness, Self, Shape, Runner’s World, and the Women’s Fitness Oxygen magazine. Oh, and Harp Column. And Cooking Light, and Vegetarian Times, and Healthy Cooking. Wow, I’m just realizing how many we get! I also visit fitness, runner’s world, and the oxygen websites.

    I subscribe to Taste of Home magazine. I also love reading Lucky, Self, InStyle, People, Bon Appetit, Everyday Food, Cooking Light, and more. Luckily the library has lots of magazines.
    Love the food. Especially the green beans. I’ve found recently that I love roasted green beans.

    Oh wow, your corn looks amazing! I was actually just thinking of the best way to grill corn because it’s on the menu for tomorrow night. Do you grill it with the husks on? In the past, I’ve wrapped it in foil but it looks like yours came out so much better than mine ever has. What’s your secret??

    mmmm….I love grilling out in the summer! Grilled corn is so delicious! I don’t read a lot of magazines, but I really like Runner’s World and Clean Eating. I also like reading Cosmo for a guilty pleasure ;)

    That meals looks amazing. I think that we are going to have to barbeque this weekend!
    I used to buy A LOT of magazines. But now, I will mainly go on-line and look at them. Unless there is something really good in the magazine. It is amazing how much money you can waste on magazines.

    We’re definitely a magazine house, that’s for sure!
    I subscribe to Shape, Vegetarian Times, Marie Claire, Martha Stewart Living, Women’s Day, Taste of Home and Ladies’ Home Journal, while the husband gets This Old House Journal, Ask This Old House, Gourmet, Relevant and a few others.

    Your dinner looks sooooo good! I love grilling… especially corn! It does make funny popping noises on the grill.. I know exactly what you mean!

    I read Self magazine, too… although I must admit that I mostly look at pictures. I have a bad habit of flipping through magazines for the pictures and not really reading.

    Nothing beats grilled corn on the cob in the summer time. And steamed green beans… yum!
    I don’t subscribe to any magazines (too much $$$). But I do frequent the websites of Self, Shape, Health, Women’s Health, Oprah, and Fitness. I will buy one of the mags as a treat :)
