A Dash of the Caribbean

Hello everybody! How was your day? Mine was bus-ay per usual and I was glued to my computer ‘til the moment I left!

When I finally tore myself away, I came right home to marinate dinner :) Let’s back up, shall we? A couple weeks ago, I got two new Mrs. Dash seasoning blends:

1. Caribbean Citrus

Now, I would be lying if I told you I didn’t like salt. It’s delicious and it makes a lot of things taste really good – after all, what would salt & vinegar chips be without the salt?! However, I 100% always know when I’ve eaten too much of it. I don’t feel good, my rings are tight, my face feels puffy…it’s not cute.

So when I feel like being salt conscious, I use Mrs. Dash seasoning blends – which are all-natural blends of 14 natural herbs and spices, are MSG free and are SALT free – to flavor whatever it is I’m making. Chicken, salads, veggies, etc.

Now, after two days of cold, gray and rainy skies – the promise of Calypso tunes and a taste of the Caribbean was particularly enticing, so I chose the Caribbean Citrus blend to make Deconstructed Caribbean Pork Kabobs!

When I got home I cut up some lean pork chops into big chunks and marinated them in a capful of the seasoning blend and some pineapple juice. While these pups were marinating, I went running!

Per my the training schedule – I ran a 8×400. Basically, that’s running a quarter mile 8 times, for a total of 2 miles. I know it doesn’t seem like a lot, but when I run these shorter distances, I run them faster than I normally would. That’s why these sorts of run are built into the schedule…so you can build up speeeeeeed.

Per the aforementioned cold, gray and rainy skies – I was a little chilly at first, but I warmed up in no time :) I wish I could give you guys exact run stats, but alas – I have no Garmin Forerunner 405 (cough, ahem) and I don’t run with my Nike+ anymore. Well, I don’t run with an iPod anymore so the Nike+ isn’t really any use to me!

After I got home, I skewered the marinated pork, some pineapple chunks (which I used the pineapple juice from) and red onion hunks – then sprinkled some more of the seasoning blend over everything. Tip: when I’m making kabobs, I like to give each ingredient their own skewer. That way I don’t have to mess around with cross-contamination, different cooking times, etc.

I pulled out my grill pan to cook these babies on since I didn’t want to bother with grilling in the cold :/ I put everything on at the same time, flipped after 5 minutes and grilled for about another 5 minutes. The herbs and spices in the Caribbean Citrus blend smelled sooooo good while everything was grilling!

I served my skewers over brown rice which I added a squeeze of lime and a  dash of chopped cilantro to.

My review – honestly…honestly – I did not miss the salt AT.ALL! The combination of the seasonings with the sweet pineapple, spicy onion and citrusy rice was so freaking delicious. I honestly didn’t think I would like this as much as I did! The pineapple juice marinade also gave the pork a super nice crust…so yummy!

Ok, off to do…well, I’m not sure what I’m going to do tonight! Ben’s got a baseball game to play in and shockingly, I have nothing on my to-do list! Sweet, sweet bliss!

What’s your favorite, go-to seasoning blend? I seriously enjoyed this Mrs. Dash Caribbean Citrus blend, but my #1 go-to flavor combo in most things is garlic & onion – which, hey! Mrs. Dash has a seasoning blend for those too! Maybe I’ll try that next time…

Do you use any kind of running/training tracker watch/device? Would you recommend it?
