Hi everyone! Hope your Monday went well!
Tonight I present to you a fairly random dinner combo – get ready for this: Steamed Artichokes + Broccoli and Tomato Egg Scramble!
See? Random, right?! Well, fresh artichokes were on sale at the store for $.69/choke so I HAD to give them a shot! I adore all things artichoke but have never actually prepared a fresh one – so I thought eh, if I mess it up it’ll be less than $1 down the drain!
So I steamed my artichokes for about 30 minutes and during the last five minutes, I added some broccoli into the steamer to soften up a little for my scramble. Which I made using:
- 1 whole egg + 2 egg whites
- 1 roma tomato
- 2 T onion
- ~1/4 cup broccoli
- S&P
- Mozzarella cheese
I cooked everything up in a skillet with some non-stick spray and topped the whole thing off with a sprinkle of mozz cheese. Then I took the skillet off the burner and put a lid on it so the cheese could get all meeeeeeeelty. My Dad always used to do that for us and I always forget to do it…I’m glad I remembered to do it tonight – Gooey Deliciousness!!
I’m not sure I’ll ever use another kind of cheese in my egg scrambles…it was SOOO good!
Tomato + broccoli are perfect partners in egg dishes.
Ok the artichoke! It was so artichokey – so fresh and yummy!! I served it with a garlic butter sauce for dipping, but honestly I only used if for a couple leaves because it was so delicious on it’s own.
I highly recommend trying this you guys…I think artichokes might be one of those fool proof veggies – so give it a try!
On another note – when I got home from work, I was hungry so I snacked on a few remaining frosted mini wheats. Well I wasn’t paying attention and didn’t realize when I had eaten my last one. When I continued to reach into the baggie and there was nothing left…I felt sad
I like to prepare myself when the last of something is coming up so I can savor every delicious flavor. Boo. Does that ever happen to you!?
