My Happy List

Good Monday morning all! Are you ready to head back to work? I had an awesome, awesome weekend – between running with my Dad in his first 5k, traveling to Modale, IA for Ben’s Grandma’s 85th and planting flowers with my Mom – I just never wanted it to end!

And even though the weekend is over and it’s a Monday, I still have several things to be happy about this morning – including:

  1. I jumped out of bed without having to use the snooze button
  2. I got to change the toothbrush head on my Sonicare toothbrush (I LOVE fresh toothbrush heads!!)
  3. The rain started about 10 minutes after my Mom and I completed a great morning walk
  4. I’m wearing a new shirt, in my new favorite color to wear – lime green

True – these are little things – but sometimes it’s the little things that get you through the day! Another thing I have to be happy about?? A Tropical Oatmeal Smoothie!

My smoothie had:

I added all the ingredients to my blender and blended until everything was smooth.

Mmmmm, tropical indeed! For a few glorious, blended minutes I was on a beach somewhere, listening to the crashing waves. Bliss. :D

I seriously cannot describe the texture of blended mango. It is the creamiest, thickest, smoothest substance known to man…you guys have GOT to try it sometime!

For lunch today, I had some stuff to clean out of the fridge so I packed a big salad with:

  • mixed greens
  • half a large cucumber
  • corn
  • red onions

Loving the flavors and textures in this salad for sure!

I also packed a sliced, Braeburn apple.

What’s your favorite type of apple? Braeburn’s are my go-to, sweet and reliable apple type of choice – but in the Fall, Honeycrisp Apples are WHERE IT’S AT!

    Yes! Sometimes it IS the littlest things that make the day! Cute lime top…makes me wish the rain would stop so I can enjoy a key lime martini!

    My favorite apple are gala apples. I don’t know why.. we just always have those at our house and they’re sweet.

    I am with you- a true apple lover. I think I have one just about every day with lunch as well.

    My favorite favorite favorite is Honeycrisp but sadly, these are only around in the fall! :( I think my next go-to is Fuji but lately I’ve been diggin the Pink Lady. (Very sweet and crisp) Braburen’s are also a wonderful choice as well. Guess it really depends on what is on sale for the week.

    You are too cute, and it’s so nice to see that you had such a postive attitude on a Monday morning.

    I’m not sure why…well the seeds kind of make my salads watery and I don’t like the tough skin…I guess that’s why! :)

    Mmm sometimes I do, sometimes I don’t. It helps keep me fuller, longer – and sometimes I like the thicker texture!
