Good Monday morning all! Are you ready to head back to work? I had an awesome, awesome weekend – between running with my Dad in his first 5k, traveling to Modale, IA for Ben’s Grandma’s 85th and planting flowers with my Mom – I just never wanted it to end!
And even though the weekend is over and it’s a Monday, I still have several things to be happy about this morning – including:
- I jumped out of bed without having to use the snooze button
- I got to change the toothbrush head on my Sonicare toothbrush (I LOVE fresh toothbrush heads!!)
- The rain started about 10 minutes after my Mom and I completed a great morning walk
- I’m wearing a new shirt, in my new favorite color to wear – lime green
True – these are little things – but sometimes it’s the little things that get you through the day! Another thing I have to be happy about?? A Tropical Oatmeal Smoothie!
My smoothie had:
- 1 mango
- 1 small, frozen banana
- 1/4 cup oatmeal
- 3/4 cup skim milk
- 2 T organic coconut shreds
I added all the ingredients to my blender and blended until everything was smooth.
Mmmmm, tropical indeed! For a few glorious, blended minutes I was on a beach somewhere, listening to the crashing waves. Bliss.
I seriously cannot describe the texture of blended mango. It is the creamiest, thickest, smoothest substance known to man…you guys have GOT to try it sometime!
For lunch today, I had some stuff to clean out of the fridge so I packed a big salad with:
- mixed greens
- half a large cucumber
- corn
- red onions
Loving the flavors and textures in this salad for sure!
I also packed a sliced, Braeburn apple.
What’s your favorite type of apple? Braeburn’s are my go-to, sweet and reliable apple type of choice – but in the Fall, Honeycrisp Apples are WHERE IT’S AT!
Have a fantastic Monday. It’s a fresh, new week – make it great!

That smoothie sounds so good! I’m definitely a macintosh apple girl. I work from home, but today I’m particularly happy about that since I am dead tired! No need to drag myself to an office!
Have a good day!
Love that shirt!
Today is my brother’s birthday – so I’m happy for him being in my life!
Braeburns are the best! And Honeycrisps are a definite close 2nd. Love a good, sunny beginning to the week! Have a good one~
You really cut up your cucumber? taking off the skin and the seeds it almost looks like celery! how come?
HONEY CRISPS ALL THE WAY!!! If not that then its a fuji apple or a pink lady!
Yes! Sometimes it IS the littlest things that make the day! Cute lime top…makes me wish the rain would stop so I can enjoy a key lime martini!
Looks like you had a great weekend. Happy Monday!
Love Honeycrisps!! They are the bestA!
I love Golden Delicious apples! Your new shirt is very pretty – perfect for the summer.
tropical oatmeal smoothie looks so perfect for summer!
MMM! Your smoothie looks amazing!
And Fuji apples are DA BOMB! I’m eating one right now, ahaha.
Speaking of Braeburn, are they supposed to be preeeetty mushy? I got one from the store and it was yuck!
Hey! Congrats on the run.. what a great thing to do with family!
My favorite apple are gala apples. I don’t know why.. we just always have those at our house and they’re sweet.
I am thankful for my family and boyfriend. SO thankful!!
Have a great week
I just found your blog. I’ve been blogging for years but just recently leaped into a second food blog.
I’ve enjoyed reading your posts.
I think fuji apples are my favorite. Or a really crisp, tart granny smith.
I’m actually always pretty happy about Mondays; I like to set a happy tone to my week
Love mango in my smoothies!! Its the best!

Ooh, an oatmeal smoothie?? Yum! That salad looks delicious, too. My favorite apple is the pacific rose! It can’t be beat!
Hm, your smoothie is the 1st one that’s really caught my attention. Looks fab!
I love Gala and Empire apples best.
Today I’m happy b/c I leave for vaca tomorrow!
CUTE shirt! I’ve never tried adding oatmeal to my smoothies before but I will have to try it!!
Honeycrisp are definitely the best! I used to like Winesaps a lot too but they’re hard to find.
Granny Smith!
I am with you- a true apple lover. I think I have one just about every day with lunch as well.
My favorite favorite favorite is Honeycrisp but sadly, these are only around in the fall!
I think my next go-to is Fuji but lately I’ve been diggin the Pink Lady. (Very sweet and crisp) Braburen’s are also a wonderful choice as well. Guess it really depends on what is on sale for the week.
You are too cute, and it’s so nice to see that you had such a postive attitude on a Monday morning.
Take care and I hope you feel the same way tomorrow monring as well.
Do you normally put oatmeal in your smoothies? Does it just make it thicker? tryingtobefit.wordpress.com
I think my fave would have to be either a gala or pink lady. Now I just want to know how do you keep your apple looking so fresh and crisp?
I’m not sure why…well the seeds kind of make my salads watery and I don’t like the tough skin…I guess that’s why!
That’s why I love them – they are so CRISP!
Awesome! What’s your URL? I’ll stop by!!
I just seal it up tight in a baggie or gladware container…keeps it fresh all day!
Mmm sometimes I do, sometimes I don’t. It helps keep me fuller, longer – and sometimes I like the thicker texture!
