Good evening Ladies & Gents!
FYI, I updated my Hal Higdon half marathon training schedule – it’s week 4 already…can you believe that?! I feel as though I just started a week ago! Per the schedule, I was to run 3.5 miles today. I’m not going to lie to you. I tried to skip it…BUT I politely reminded myself that everyone has got 30 minutes to spare – so off I went!
After two days of rain, it was extremely humid out – which made for a sweaty and muggy run. A swuggun, if you will. OH! AND! I came this close to getting steamrolled by a gigantic forest ninja – an enormous brown deer! I was running along, minding my own business, when all of the sudden I hear this really loud “bicycle” coming up in the grass behind me. Well 5 seconds later, this mammoth deer comes shooting past me – literally 6 inches away from my body – and jets back off into the forest. I’ve never experienced anything like it. FREAKY!!!
Later in my run, I saw three cardinals together…what are the odds of seeing three cardinals together in the wild? Not very high, in my experience…
ANYWAYS!
Tonight I made a really simple and fresh dinner. Grilled Chicken with Pineapple Pico de Gallo and Cilantro Rice.
True, it’s a mouthful, but it’s super easy! I actually made the salsa on Sunday when I got home from grocery shopping and everything was out, so all I had to do was grill the chicken and make the rice tonight!
To season the chicken I used my Mrs. Dash Fiesta Lime seasoning. I sprayed each side of the breasts with some non-stick cooking spray and then sprinkled on my seasoning. Finally, I grilled the chicken for ~15 minutes, flipping half way through.
I prepared my brown rice according to package directions and finished it off with a squeeze of lime, a dot of butter and a sprinkling of cilantro.
You know what this rice tastes like?! CHIPOTLE RICE!! Heaven!
As soon as the chicken hit the grill, the Mrs. Dash seasoning scent invaded my senses. This blend is so delicious – and salt free, mind you!
Fabulous, fresh, filling – a summer staple dinner for sure!

Haha, that is crazy about the random dear. We have tons of deer in PA, but I’ve never experienced one accompany me on my runs. Freaky!!!
Wow, your dinner looks gorgeous. I love how colorful and vibrant your dishes always look. They seem to reflect your cheerful and vibrant personality-I guess it’s true what they say, we are what we eat.
SCARY! When I run at home in west des moines in the greenbelt park from 39th to 50th, parallel to e.p. true I’ve come face to face with a deer twice and almost peed my pants!!
Chipotle rice is totally my weakness!!!! looks good!!
What a fresh looking dinner!
The cardinal picture is beautiful. I notice birds so much more in the upper midwest than I did in Arizona. Did you ever see bald eagles up in Minnesota. About 4 years ago, I was running around Como Lake and saw a bald eagle sitting high up in a tree. A group of people had gathered nearby and were staring. It was a lovely sight.
Thai salad rolls – if you haven’t tried them, you need to!!!
They’re definitely our go-to food on hot summer nights.
They’re completely customizable, simple, affordable and just plain good, and it’s just as easy to make 1 as it is to make 30, so they’re great for a crowd!

Oh my gosh, that deer incident sounds scary! I would have freaked out. Your dinner looks delicious, especially that salsa. It looks so fresh and colorful!

Once when me and a girlfriend were running in our local community forest we came around a corner and there were two huge moose! It was SOOO scary!
Moose aren’t dangerous at all, unless they start stomping on someone.
Some gorgeous food on this site …… it almost tempts me to eat healthy, and maybe start waddling around the block. Thanks for teaching me how to prepare and steam artichokes, that’s on the menu tonight in a salad!
