This is a terrific twist on a standard Pico de Gallo recipe. The addition of pineapple gives the spicy topping a sweet burst of flavor. Try it with kiwi or mango too!
3 small to medium sized tomatoes
1/2 large onion
1 jalapeno pepper
2 cloves fresh garlic
1 bunch cilantro
1 small can pineapple tidbits drained, 1 T juice reserved
- Chop up tomatoes through cilantro and place in bowl.
- Add pineapple tidbits + 1 T reserved juice.
- Squeeze lime over all ingredients and add S&P to taste.
- Mix everything together.
- Serve with tortilla chips, over grilled chicken/fish or over salads.
