Pineapple Pico de Gallo

This is a terrific twist on a standard Pico de Gallo recipe. The addition of pineapple gives the spicy topping a sweet burst of flavor. Try it with kiwi or mango too!

Ingredients:

3 small to medium sized tomatoes

1/2 large onion

1 jalapeno pepper

2 cloves fresh garlic

1 bunch cilantro

1 small can pineapple tidbits drained, 1 T juice reserved

1 lime

S&P

Directions:

  1. Chop up tomatoes through cilantro and place in bowl.
  2. Add pineapple tidbits + 1 T reserved juice.
  3. Squeeze lime over all ingredients and add S&P to taste.
  4. Mix everything together.
  5. Serve with tortilla chips, over grilled chicken/fish or over salads.
  6. Enjoy!

    That looks great! I love tropical salsas and love the fresh whole foods kind, but they’re expensive. It’d be great if I could make them myself! Thanks for the recipe :)
