I’m Cool as a Cucumber

Good morning everyone! Welcome to your week!

Thanks to two days of lovely humidity :) I have been sweating non-stop for well…two days! This morning was no exception and I returned from my Mom walk ready for a cold shower and an icy cold smooooothie! A Cinnamon-Vanilla Almond Butter & Banana Smoothie!

In the mix:

  • 1 medium frozen banana
  • 1 vanilla Oikos yogurt
  • 1/2 cup skim milk
  • 1 T Barney Butter
  • splash of vanilla and cinnamon

This baby is packed with protein between the yogurt, milk and almond butter and is sure it keep me full until lunch! And it tastes great, to boot!

That Greek yogurt gives the smoothie such a, well, smooth texture – it’s just fantastic.

For lunch I packed a salad that certainly won’t be winning any beauty contests – but it’s going to be AWESOME!! Mixed greens with Barley Salad.

I literally can’t wait for this salad – that barley mixture is soooo tasty!

I also packed some fresh grapes. These are an absolutely perfect snack for the afternoon :) Portable, easy to eat and a little burst of sugar to get me through an afternoon slump!

Well my smoothie did the trick – I am cool as a cucumber now and ready to start my Monday. It’s going to be a busy one!!

    I think that salad looks beautiful! So fresh and colorful. And the barley sounds great.

    My snack of choice is Fiber One cereal…sometimes with almond milk, sometimes right out of the box! :-)

    Heyhey! That smoothie looks so good–I might have to try it. I have been drinking the green monsters (1 cup almond milk, spoonful of almond butter, 1 frozen banana, 2 big handfuls of spinach, and a spoonful of flax seed) for about 1 week now. They are so good and filling and my skin is starting to look better! Makes me love them even more. :)

    My favorite snack would have to be 1 piece of peanut butter toast with granola sprinkled on top. I love PB&Co’s White Chocolate peanut butter on honey wheat bread. Delicious and filling.

    That smoothie looks heavenly! And I love the addition of barley to your salad… I don’t cook with it enough.

    I like to snack on apples, bananas or dried fruit with PB, graham crackers with PB (and pretty much anything with a nut butter) or a nutrition/Lara bar if it’s all I have around.

    Your salad looks awesome – I love grains in salad to make them a bit more dense. I love fruit, crackers & nut butter or a granola bar for an afternoon snack.

    The Greek Yoghurt is great in smoothies, especially the plain. The use of the Greek Yoghurt also gives me more staying power, throughout the morning.

    I will sometimes whip up a smoothie mid-afternoon, especially in the summer. Other go-to’s are cut up vegtables with hummus and plain popcorn (especially great to fill that carb/salty craving). The fiber really helps keep me satisfied until dinner and fulfills my “crunch” desire.
