Good evening everyone! Does anybody feel like it’s Thursday or something?? Surely it can’t only be Tuesday, can it? Rats – it is!
Ok, I have a serious problem. The problem is…I can’t stop making chipotle rice!!! I find myself thinking about dishes I can create just so I can have it!! It least I’m making it with brown rice so that’s good, right? Right?!
To satisfy my need for this delicious rice, tonight I made Spiced Black Bean and Rice Bowls for dinner.
My rice bowl had:
- 1/4 cup cooked, chipotle rice
- 1/4 cup black beans, spiced with cumin, oregano, chili powder and cayenne pepper
- 1/4 cup leftover barley salad
- cherry tomatoes
- avocado
Ahhh…I’ve had my fix…this rice SERIOUSLY did not disappoint!
This actually tasted a lot like a real Chipotle Burrito Bowl – which, by the way, is the last straw that got Ben and I to move back to Iowa! We became obsessed with Chipotle while living in Minneapolis and when we found out they got one here, we decided it was finally ok to move back!! That’s actually kind of sad…whatevs, Chipotle rocks!
All mixed up…
For dessert, there’s something sweet and delicious waiting for me in the freezer…bet you can’t guess what it is! If you really can’t, I’ll let you know tomorrow
I also updated my half marathon training schedule – scroll down to the end of the page to see week 5’s schedule. For those of you new to the blog, first of all, HI!!! Second of all, back in May I decided that I needed a workout schedule I could follow, instead of randomly deciding to run 5 miles here…4 miles there…etc (read about it here.) So, I busted out the schedule I used to train for my half marathon in the Fall of 2008 and have been following it ever since!
I haven’t been following the schedule with a race in mind, but running the Dam to Dam 5K with my Dad and seeing all the 20K people come in and cross the finish line, really gave me an itch to run a longer race again. I’ll probably regret writing that, but maybe it’s the motivation I need to sign up…we shall see!

Do you guys work out in “work out” clothes? ie moisture wicking, supportive, specific workout clothes? Or do you workout in random T’s and shorts?
IF I could afford it, I would totally rock the cute tanks and running shorts…but my stash of old t-shirts and sofie shorts is just too big to justify spending money on real clothes…here’s my ideal outfit. Isn’t it cute?!

wow… that rice bowl looks amazing!! I’m a sucker for anything with avocado. I’m definitely making that.
As for workout clothes. I have mostly old t-shirts and stuff. I do spend more on the support garments though.
That burrito bowl is so colorful, I love it!
(I too am obsessed with the Chipotle – so good)
yum that rice looks delicious!
That rice bowl looks phenomenal. oh man I may have to make your chipotle rice. I haven’t been a big rice eater, but brown rice is so good for you that I think I should start eating it more. I’ll let you know if I make your chipotle rice! Have a good evening!
I’m just starting to stock up on workout wear and I think I am a tad addicted now!! But there are always a mix in of old T’s!!
i just started a workout plan too
.. makes things so much easier.. just look at the list and do it!
awesome rice dish!

Ok, seriously? I’m going to have to just start copying your recipes, because this sounds AMAZING!
Well, I AM new to your blog, and wish I had the billz to buy cute running – and everything – clothes. I usually stick with real running shorts, but my t-shirts are v. random. Like, I wore them to nice occasions seven years ago random.
Wow that rice bowl looks amazing. I think I’d get addicted to it, too!
Yep, I always workout in tech clothes. I get really sweaty, and if I wear a regular cotton tee, I’ll get DRENCHED, chafed, and it’s oh-so-uncomfortable.
Sometimes I worry that my outfits look a little too fancy, especially if everyone at the gym is in baggy t’s and pants. But I know for experience that doesn’t work for me. That ideal outfit is adorable
Just stumbled across your blog today — everything looks delicious! Can’t wait to try some of your recipes.
Did you do the DM half marathon? I did too, and also did the D2D 5k and was really disappointed I wasn’t doing the 20k! Any thoughts of doing a full marathon at some point (assuming you haven’t already)?
I always run in real running clothes — in prep for the HM last year I got 2 pairs of shorts, 1 pair of tights, and a couple short sleeved shirts from the outlet mall. I usually bike in tech clothing too, but for gym workouts (except running), I just use any old t-shirt and shorts.
Avocado and rice is such a good combo! I own a lot of work-out clothes but a lot of mine are from places like Ross! you can find good deals there.
mm that rice looks good!!!!! i’ll probably do that soon!
as for workout clothes.. i used to just do tanks & random shorts. but then boyfriend convinced me to go with the stuff from target. and the stuff lasts — as long as you don’t put it in the dryer. i’ve had most pieces for about 2 years now, and it still looks fine.
and definitely a good suggestion — go to ross or tj maxx or marshall’s and scour for work out clothes, if you can find a top for 10 bucks, it’s a great deal. I’ve gotten a couple nike tops taht are originally $40 bucks, and it ended up being 9.99. i was thrilled.
WOW those grapes look delishh!
Even if workout clothes are expensive, you can almost always get them cheaper (target or nordstrom’s rack).. and for me they’re def worth it.. they’re a great motivator to go to the gym or on a run!
I love Chipotle too! I’m definitely going to try your rice.
I work out in workout clothes, but like others have mentioned on here, got most of them at places like TJ Maxx, Ross or the Nike Outlet. I find that the wicking really helps in heavy workouts. When I occasionally have the money to splurge, I love lucy for workout clothes (www.lucy.com).
[...] Remember my homemade chipotle rice kick!? I need to get back on that train [...]
I didn’t actually – that would have been a really good one to run…maybe next year?!?! After running the half last year, I just don’t think my body is built to run a full marathon. I HATE saying that, but I know my body and I just don’t think I’m up for that kind of distance!
