Hi everybody! Did you make it through your Monday ok?
Confession: I’ve kind of felt like Eeyore all day today…

Kind of sluggish, sleepy, headachey, donkey-ey…ok not the last one – but I’ve just kind of felt a little blah, if you will. I’m not sure why I’m in a funk – maybe it was the longer than usual bike ride on Saturday. Hard workouts tend to hit me harder two days after, rather than the day after. Whatever it is, I’ll be glad to snuggle and rest on the couch tonight!
Before I head down, I want to tell you about the terrific wrap I had for dinner! I was craving something kind of warm and comforting – this Two Cheese, Spinach & Tomato wrap did just the trick!
I used one flat out wrap, a slice of muenster cheese and provolone cheese, one roma tomato and a handful of spinach.
I wrapped it all up and toasted it on my flat top skillet for a couple minutes per side until the cheese had a chance to melt.
Mmmmmm – this was just what the doctor ordered! Warm and toasty wrap, gooey, melty cheese and fresh and delicious veggies
I also cut up a giant watermelon that I got at the store this weekend for $2.88!!
Here’s a watermelon buying tip – the bigger the yellow spot on the bottom of the watermelon – the sweeter it is. The yellow spot tells you how long it’s been sitting out getting ripened by the sun!
Pink, juicy, fresh and delish
Perhaps I’ll save some to make a blended watermelon martini??
Ok friends, I’m heading off to the couch to catch up on some rest, relaxation…and maybe some Bachelorette?? I haven’t been able to get into this season for some reason!

I ran a 3 miler on Monday night after eating something similar to your wrap: an open faced tomato, green pepper, and cheese sandwich. Your wrap looks yummy! I’ll go look for wraps and try this next time.

I hate when that happens, but thankfully, tomorrow is another day and I am sure it will be 100 x’s better!
I love your tip on buying watermelons. Hubby and I were just talking about this. He seemed to think that the perfect way to pick a melon was by tapping the outside to hear for its hollowness. I laughed at him and told him I thought he was full of it. I think your method sounds much more logical!
PS- I noticed that your hubby had his widsom teeth out a few weeks ago. I am getting mine out on Thursday! Ahh, I am nervous. How did he do? Was he able to eat? I think not being able to eat for a few days is what scares me the most.

That is a great watermelon tip! There is nothing more frustrating than getting a “watery” melon after all that cutting.
I haven’t been able to get into the Bachelorette that much this season yet, either…what gives? I do think Kiptyn and Jesse Winemaker are pretty cute.

This Bachelorette is going pretty slowwww this season. I wish one of the guys would just spice things up and come forth that they have a gf back home!! we shall see though i guess
