Good morning guys – Happy Monday!
Well my Mom had to go into work early this morning, so I didn’t have a walk to get me started…but I did have Chocolate Peanut Butter coffee!! Seriously, this stuff is unbelievable. It smells and tastes just like a Reeses Peanut Butter Cup – which happens to be my favorite chocolate candy!
I paired my fabby fab coffee with a fabby fab bowl of Almond Biscotti Oatmeal!
In the mix:
- 1/2 cup each oats, skim milk & water
- splash of vanilla & cinnamon
- 1 medium banana
- 1 crumbled almond biscotti
- 2 dried apricots
- Drizzle of sugar-free maple syrup
Oh gosh – the texture of the creamy oats, crunchy biscotti and chewy apricots was awesome!!
This was just what I needed to start my morning off right
For lunch I packed a salad with:
- Mixed greens
- 1 HEWge cucumber
- ~1/2 cup red grapes
- Mozz cheese
I LOVE sweet additions to my salads! Do you like sweet salads?
I also packed a Vanilla Bean yogurt
and a Braeburn apple, natch!
Yesterday I missed my long run – eek! – so today I’m heading out for my seven miler. I’ve updated my training schedule (scroll to the bottom) for week six. I can hardly believe that it’s week six already!!!! My week five was kind of all over the place with replacing runs with bike rides and taking a couple days off. Oh well, as long as I’m active, I’m pretty happy. This week is really ramping up the mileage though, it’s going to be a doozy!
You guys, I miss Mama Mia – I just can’t get over how good it was! My car CD player/radio is busted too so I can’t even listen to the soundtrack on my morning commute, bust! I think I’ll bring it into work to listen on my computer…I’ll be singing show tunes all day!

Fueled by my love for Mama Mia (told you I was an obsessed 12 year old) I would go to wonderful, enchanting, exciting Greece! (that’s where the musical/move is set!)

I’d love to go somewhere like Fiji… Sadly, because we live so far away from our immediate family, most of our vacation time is spent visiting them.

I smiled when I saw your lunch since mine is nearly identical. I am addicted to adding the grapes to my salad, though instead of the cheese I have tuna to add the protein. I like dipping my apple into my yogurt. I am glad you liked the show. I saw the show a couple of years ago before the movie came out and couldn’t help but think about it the whole time I was in Greece.
You have to tell me where i can get that coffee.. what brand is it?
I would go to europe or maybe Isreal. Both I want to go to its just a matter of time.

I would have to agree with you on going to Greece! I absolutely LOVED that movie! I wish I could see it on Broadway!

I’ve always wanted to go to Greece. The beaches and cute white houses just look so relaxing and fun. Plus, I have read that they have the best yogurt!
