I was MIA last night, huh? Well, I have a good reason – I was at a photo shoot! Yes, me – I was the subject of a photo shoot! It’ll be a few weeks before I reveal why, but holy cow it was Iowa’s Next Top Short Model around here last night (I’m 5’2)! Super cool experience which will most likely never happen again so I savored it
When I got home I had a ton of stuff to do, including finishing up those sugar cookie wedding bells for my Mom’s get together tonight – wabam:
I had a couple – they were sooo good. A couple people asked how I get the icing to lay flat. I outline the cookie in a thicker icing and then fill in with it thinned out icing. Ok, enough marketing talk…in other news – oats are back!!! They missed the blog and me – they told me so… The conditions were finally perfect for a bowl – the house was cool enough to turn on the stove, I had some fresh, dried figs (oxymoron?) on hand, delish, dried apricots, milk AND a Dutch letter for an awesome topping! Last night I had Ben go get us some milk and he came back with 2 Dutch letters! What a guy
In my bowl:
- 1/2 cup oatmeal
- 1/2 cup each of skim milk & water
- 1 medium banana
- splash of vanilla & cinnamon
- 2 dried black mission figs
- 2 dried apricots
- drizzle sugar-free syrup
- ~1/4 Dutch Letter
I feel like it’s been weeks since I last had some down-home cookin’ oatmeal and boy did it taste good!!
OMG Dutch letters – is there anything better??
When I got home from the shoot last night, I made Caribbean Pork, Pineapple & Red Onion Skewers with Brown Rice, and I took some leftovers today!
Love those sweet, grilled pineapples mixed with the spicy, charred red onions.
I also packed a peach that smelled so incredibly, deliciously, peachy, that I had to force myself not to eat it with my oatmeal!
I’m off to start the day, my friends – have a deeeelightful Wednesday!

Also, I have only seen dutch letters in Des Moines! I have never seen them anywhere else in the state and have never tried one. I need to try one the next time I’m in DSM.

What are Dutch Letter? Never heard of them!!
Don’t eat many international treats but I do love some Baklava!! One of our Dr’s at work is Greek and her homemade Baklava is marvelous!

My favorite international dish? I’d have to say Mango & Sticky Rice from Thailand.
Mango and Sticky Rice is amazing! Good call Quinn – I also love me a good Austrian strudel and a yummy Vietnamese coffee (sweetened with condensed milk). Drool.
Photoshoot sounds fun can’t wait to hear about it! Those cookies look delicious will def keep them in mind when I have something coming up!

The oats look amazing! The only thing better than a Dutch Letter is a DUTCH LOG!!!! All the almond filling X10 from the filling in the letter!

Your oatmeal recipe sounds delicious! I get out my slow cooker every Sunday night and make enough for the week ahead, with fresh sliced apples and various dried fruits/nuts. I get to have a fresh warm bowl when I wake up Monday morning and pack the rest into containers I can take to work. Yum!
Photo shoot and announcement? Sounds like so much fun! Can’t wait to hear all about it. Your cookies look beautiful, too. I rarely have the patience to deal with sugar cookies.
