Good afternoon everyone!
Mmmm…mixed emotions here. The run – well, it didn’t go quite as planned. I tried to hydrate all day, I thought the cooler temps were going to maintain and I tried to rest before the run, but it just didn’t work out in my favor. I had zero energy and it was super, super hot out. I finished up at a little over 4 miles. Normally, I’d be fine with that – but today I was really hoping to go for the gold. I’m also the type of person that finishes every goal I set for myself, so it makes me a little blue when I don’t pull through. BUT, tomorrow is a new day – and I’ll be hitting up the gym so that the weather will not be a factor in how the run goes.
On a happier note – Father’s Day with my Dad went great! For lunch we made Custom Foil Packs. Gosh, I just really can’t say enough about these babies. So simple, so quick, so tasty – and everyone gets exactly what they want!
I went vegetarian and made a packet containing:
- Shaved potatoes
- Yellow squash
- Broccoli
- Bisignano’s Italian salad dressing (made locally in Iowa)
- dash of red pepper
- all-purpose seasoning
- S&P
- 2 small ice cubes (to steam the veggies)
This was PERFECT – the best foil pack I’ve had yet! The potatoes were crunchy, the vegetables were just the right texture and that dressing was just dynamite.
Ben and I also brought over some pasta salad which had:
- Pasta
- Roma tomatoes
- Sliced black olives
- Bisignano’s Italian salad dressing
- Pepperoni
Mmmm!! The pepperonis were actually a last minute addition, donated by my Mom. They were the perfect flavor to round out the salad.

Then – the STAR of the meal – my Mom made a 100% homemade Strawberry Rhubarb Pie! She made the crust and everything! I’m going to go out on a limb and say it was one of the best slices of pie I’ve ever had. She did a great job!
Now, of course we were all together celebrating Father’s Day. So here he is – the man of the hour– my Dad! My brother and sister-in-law got him a Rolling Rock glass, coaster & bucket kit. I’ve never met a man that loves Rolling Rock as much as this guy does. He’s cuckoo for it!
Ben and I got him a picture of himself, my brother and I at the Dam to Dam 5k race we ran together earlier in the summer!
Happy Father’s Day, Pops. To the greatest, most supportive man I’ve ever known. Someone that would do anything for his wife and children and is a role model in so many ways. I love you!!!
Ok – now we’re off to spend Father’s Day with Ben’s family. A great way to wind down after another great weekend

PS: Fellow Iowans – Hy-Vee now sells Oikos Greek Yogurt!!! It’s true – there was a whole stock of strawberry, honey & blueberry flavors – so jazzed!
