Hi guys! Wow, I’m in a good mood tonight! Here’s why:

1. After work I headed straight to the gym and knocked out 6 miles on the treadmill! Each treadmill has a flat screen television mounted to the front, so I got to watch Oprah while I chugged along :) By the end of the session I was getting pretty bored, but I’m so glad I kept running – exercise seriously makes my endorphins soar!

2. The weather is incredible right now. There is the nicest breeze coming in the house and I am completely comfortable for the first time in a couple weeks. It’s supposed to get down to 56 degrees tonight which = the perfect sweatshirt and snuggle weather :)

3. When I got home I made the.best.dinner.ever. Egg, Bacon & Cheese Muffins! Decadent…decadent!! First I toasted an english muffin. While that was toasting I scrambled 1 whole egg + 2 egg whites and nuked some lean, center-cut bacon in the microwave. When everything was ready, I topped each english muffin half with a slice of american cheese, half of the eggs and a strip of the bacon.

Seriously…seriously – I almost teared up eating this! Maybe it was because I was so hungry from my run, or maybe it’s just because you just really can’t go wrong with bacon, eggs and cheese – but this was soooo delicious!

It literally took me 5 minutes to make, too!

This center-cut bacon has some great stats for bringing SO much flavor to the party. For 2 slices we’ve got: 70 calories, 5g fat, 5g protein!

I also had an enormous, sweet white peach.

There you have it folks – the three reasons why I am a happy, happy camper tonight :) The happy camper levels should increase even more significantly when I have some brownie bites for dessert later :)

    Egg Muffins are the best!!! What kind of muffins do you use?

    I have found that the Thomas’s Diber Fiber Honey Wheat is TO DIE FOR! Especially when it comes to making these babies.

    Great job on the 6 miler, on the treadmill too! I think I still would get bored even with a flat screen in front of my face!! Your weather sounds awesome! Perfect running weather in my opinion!

  10. i had breakfast for dinner tonight too! two slices of french toast and scrambled egg/egg whites with a pear and a holey donut for dessert. it made me very happy too :)

    I don’t belong to a gym, so I always get really excited about hotel gyms with the individual flat screens on the treadmill–nothing better than a little Oprah while getting in a good workout!
