Good afternoon everyone!

Can you say SHOPPING?!?!?! That’s how I spent my whole afternoon! My Mom and I were at one mall for almost 4 hours…and then I went to another mall by myself for about another hour!! Don’t worry – we didn’t do too much damage – I only got a few essentials and used birthday money to buy everything. My allowance fund is safe and sound :) Here’s what I got:

2 tops:

These are standard capris which I needed SO badly – I didn’t own a single pair!

Ok, I know these look like Hammer pants – but can you say stretchy waistband???? Hello?! Amazing!!! They are flare leg bermuda length shorts and are soooo comfortable!

In the middle of all our shopping we took a Panera lunch break. I had had an un-pictured Peanut Butter Cookie Lara Bar (my absolute favorite) and an iced latte from Starbucks while shopping, so I wasn’t too hungry. Therefore we split a “you pick two” option. I got the Chicken Noodle Soup + Apple and my Mom got the Mediterranean Veggie Sandwich.

If you’ve never tried this sandwich from Panera – I highly recommend it. It is AWESOME!

Then I came home and made my dish to share for tonight’s BBQ! I used a recipe from a friend of mine and made Lindsey’s Corned Beef Dip. Yep, corned beef. Don’t be scared my friends, this is incredible!

It’s got:

  • 16oz tub sour cream (you can use light)
  • 1 packet ranch dressing mix (not dip mix)
  • dash of onion & garlic powder
  • 1 package corned beef, cut up
  • 2 green onions, sliced
  • ~1 cup shredded cheddar cheese

That’s it! So easy, so few ingredients – sooooo tasty :)

Well I’m off to go enjoy the evening with friends and family – should be a blast! Oh darn, I just looked out the window – it’s pouring out right now! Shoot :( Looks like we’ll have to move the BBQ into the garage. Ah well – it’s the company not the location that matters :)
