Good evening everyone! Was your Monday ok? Mine was good – didn’t crawl, didn’t fly…BUT a co-worker brought cupcakes for my birthday, which was a special, un-expected treat!
Man I love me some cupcakes!!
After work I came right home to make some dinner because I’ve got three items on my agenda this evening:
- 4 mile run/walk
- Go to my parent’s house to give my opinion on some fabric my Mom wants to re-upholster the couch with
- Dig into Rosetta Stone!!
Gosh I’m excited!! I wonder how in-depth Level 1 will go (which is what I got)…I guess we’ll see!!!
Ok – first things first – you guys have GOT to try what I made for dinner tonight: Greek Turkey Burgers!
I took 1 package (~1.2 lbs) of 99% fat-free, ground turkey breast and mixed in the following items:
- ~1/4 cup feta cheese
- ~2/3 package frozen spinach (thawed and excess water squeezed out)
- 2 T minced red onion
- 2 T chopped sun-dried tomatoes
- dash of dried thyme, oregano, garlic powder and S&P
The moment these burgers hit the heat, my whole kitchen was filled with the most amazing smell and my stomach started growling!
I served the burger over a bed of baby spinach (seriously – spinach for breakfast and two types of spinach for dinner??? I am POPEYE!!!) and drizzled the whole dish with some delicious, olive oil based Italian dressing. Ughhhhhhh this was amazing!!!
99% fat-free turkey breast is definitely more expensive than it’s beefier counterpart, but I really do feel a lot better about eating it – and I think that’s worth a couple extra bucks sometimes. And I mean, come on – this is a five ingredient meal (plus spices) which made 4 jumbo-sized patties that clocked in at just under 200 cals each!! You just can’t beat that kind of dinner!
I’m heading out on my run/walk now and I’m going to daydream about what I want for my nightly snack. Hmmm…HMMM…eek I don’t know what to have!!

Favorite evening snack used to be fruit and yogurt. Or raw banana ice cream … But, since I’m doing this new food combining thing – no fruit after dinner. GASP!

OK…you’re the second food blogger I follow that’s blogged about turkey burgers in 24 hours. I MUST make this recipe. Yum! Plus I’m guessing it’d make great leftovers and that’s something I love to have around.
I think I’ll wait to see if I get some spinach from my CSA this week. Nothing like using super-fresh produce!
my major weakness is ice cream. i’m learning that if i let myself have a little each day, i can be much more controlled when i have it!

Those t-burgers looks a-m-a-z-i-n-g! My hub makes a mean turkey burger also but I might have to step in next time they’re on the menu and suggest this delight! Feta in a burger=so perfect sounding! Ha!

Your burger looks interesting. It doesn’t even look like a turkey burger. It must be the extra lean kind. Mine is darker. Looks fab.

And those turkey burgers look incredible! My favorite evening snack is pumpkin mixed with cinnamon, topped with reddiwhip, cocoa powder, and sprinkles. Yum!
Hi! I love your blog. I just started reading it recently, but I love your upbeat attitude and all the interesting information that you share. How did you get up the courage to try a green monster? I keep hearing about them and everyone raves about how great they make you feel but I’m not sure if I can handle the idea of spinach for breakfast. Lately my go-to evening snack is Greek yogurt with chopped up fruit and maybe a little bit of honey. Just add some cereal and that’s my favorite breakfast too!

My favorite evening snack varies by the day, but recently I have been on a popcorn kick–I love adding a handful of trail mix for some sweetness:)

Loooks amazing. i’m def making these this week. Last night i bought dark choc covered pretzels at trader joes. They’re the perfect combo of salty and sweet and i only want a few at a time so that’s good.

Thank you, very useful. I wasnt really a big fan of Spinach for many years (ok, that’s a total understatement, I hated the stuff), but after marrying a vegetarian I kind of had to put up with it, and have slowly come to totally love the stuff. Spinach curry is undoubtedly my absolute favouritest! I even found an entire spinach recipes website which is my new favourite site now, you should take a look!
