Do You Trivia?

Good evening everyone! WOW. This was quite possibly the fastest day ever!! I got into work at 7:30 and the next time I looked up, it was already 1:15! Where does the time go?!

I’m happy to report that lunch was super spectacular today. The pepper jack cheese + blueberries were an insane combo, which I highly suggest you try! I was comfortably full (thanks lentils!) until I got home and started on dinner, which was inspired by this recipe – for Lemon Chicken with Whole Wheat CousCous!

Oh yes, Trader Joe’s made another appearance tonight! I used some whole wheat couscous I picked up this weekend to make a lighter-than-air, pillowy-soft bed for my sautéed chicken.

All I did was sauté some chicken breasts that I had seasoned with S&P, onion & garlic powders, for about 5 minutes a side. When those were done, I removed them to a plate and added 1 1/3 cups chicken broth + 2 Tablespoons lemon juice to the hot pan.

After that reduced for awhile, I took it off the heat and stirred in ~1 tablespoon of buttahhhhhh. Meanwhile, I microwaved some couscous and steamed from fresh broccoli. Remember when Ben inhaled couscous? Good Lord, that was hilarious!

When everything was ready, I spooned some couscous onto my plate, added the chicken on top and drizzled the lemon sauce over everything. My brocc stood guard on the edge of the plate. ;)

You guys – this was insaaaaaaaanely good! The couscous soaks up all the lemon sauce and the garlic powder in the chicken seasoning was such a great complimentary flavor. The whole wheat couscous is super nutty and delicious too, but don’t fret if you can’t find the WW kind – regular couscous is great too!

You guys – not food, running or travel related – but I seriously don’t know how much more I can hear about Michael Jackson…I think I might be losing it. Maybe it’s a sign I should turn off the tv??

OH – HA! Speaking of tv, while I was cooking dinner tonight I watched Kids Jeopardy. Can I just tell you how much I love KJ?! I can answer every single question!! One of the girls playing today was wicked smart…like, too smart…it was crazy.

I LOVE trivia – I think that’s probably why I love BLURT! so much. Normally I kind of hate game-type shows (Deal or No Deal gives me massive anxiety) but I love shows like Jeopardy and Who Wants to be a Millionaire!

    I’ve never actually tried cous cous (well I’ve never tried to make it myself) I’m not a big pasta or rice fan but I think I might like this. Do you think it is more comparable to pasta or rice?
    Your method of using this grain is incredible! Dinner looks so yummy.

    I LOVE trivia game shows. When I use to run at night (now I switched to am), I would watch Wheel of Fortune and play along. It made the time fly by!! :)

    Chicken looks great – love the little crusty outside too! On another note – settle a discussion I’m having – do you freeze bananas with the whole skin on or take the skin off and freeze …..or doesn’t it matter!!!

    I LOVE TRIVIA! Sorry – it needed all caps! I honestly love anything trivia-like though; trivia nights at bars [or pub quizzes as I call them ;) ] are my fave!

    That lemon chicken looks so good! I might have to try that one out – lemon-soaked couscous? Yes please!!

    It’s actually completely different from rice or pasta – it is SOOO great!! If you don’t want to buy a whole box, look for some in the bulk bins at your grocery store! :D
