Hey hey folks – how ya’ doin’?

Today is a weird day weather-wise. My Mom and I set out for our walk at the normal time, but it was pitch black out. Kind of unnerving and kind of strange for August, isn’t it? At any rate, it was a good walk and I’m revved up for the day :)

For breakfast this morning I made a Duo of Cottage Cheese.

I picked up some beautiful, juicy, ripe peaches at the store this weekend and Ben’s Mom gave me some tomatoes grown in her friend’s garden. Gosh, the friends of my Mother and Mother-in-law are really pulling through this summer!

When Ben and I were at his parents house this weekend, we were talking about how we like to eat tomatoes. Ben’s Mom mentioned that she liked to eat them cut up with cottage cheese, so I decided to give it a whirl!

This combo did not disappoint! It would also be really, really good on a big hunk of toasted baguette…mmmmm…

And I had always eaten my cottage cheese with pineapple chunks growing up, but a peach was a delicious switcheroo!

If you live in Iowa then you know the pure bliss that is cold, creamy and thick AE Dairy Cottage Cheese. This stuff is like ice cream.

This was a super quick meal as I dished out my cottage cheese and chopped up my fruit last night. This morning, I combined the two and presto – breakfast! Yet another example of quick and easy things you can do to save time in the morning!

For lunch today I packed the other half of my Citrus CousCous Salad from the 101 Simple Salad Challenge.

Today I added sliced, toasted almonds. UGH I want this NOW!

Can I just reiterate how EASY it is to make couscous?

  1. Boil water in a pan
  2. Add an equal part of couscous to the pan and put a lid on it
  3. Take the pan off the burner until you’re ready to eat
  4. Fluff with a fork and EAT!

This is easier to make than pasta, my friends. No straining involved – it’s the stuff, really.

I also packed another fab duo of Almond Butter & Carrot Chips.

Carrot Chips are nature’s perfect almond butter dipper and scraper, if you ask me ;)

Well it’s supposed to be hotter than it was yesterday so I’m packing my bag to hit the gym after work. Think happy, motivational thoughts for me!!

What’s your favorite cottage cheese mix-in? Do you even like cottage cheese?

I could eat tub after tub of it, but I’ll only eat the AE Dairy variety. Since it doesn’t go on sale that often – and I’m a stickler for deals at the grocery store – I don’t get to enjoy it as much as I would like!

    cottage cheese. Eh. I’ll eat it. but maybe cuz i’ve never tried the AE Dairy brand, that I don’t know what I’m missing. but i would probably try it with the tomatoes, and probably mix it with some tart fruit!

    I love AE Cottage Cheese! My favorite thing to mix in is salsa to eat with tortilla chips or fresh dill. My fiancee loves his with sauerkraut (barf).

    I like cottage cheese with sweet mixins like fruit. I have had some of the best peaches lately also!! I’ve noticed that it stays darker later in the mornings too! Maybe that means fall is coming!

    Question- What kind of camera do you have? Your pics always look amazing and have the best quality and definition I’ve seen! I’m in the market for a new camera so I wanted to get some opinions:)

    I wish I liked cottage cheese like that, but the ONLY way I can eat it is in dishes like lasagna, etc. I don’t know why!

    I prefer my cottage cheese with jam. The sweetness really sticks in there!

    You are right – couscous is one of the EASIEST things to make ever.

    I know, couscous is totally me go-to grain because it’s so easy to cook. I often use it instead of rice for stir-fry!
    My favorite cottage cheese mix-ins include sunflower seed butter (for sweet) or cucumber and dill (for savory). Cottage cheese is the sole reason I am not vegan!

    I love the little carrot chips – such a cute idea! My favorite cottage cheese mix-in depends on my mood. I love sweet things, like pineapple and peaches, but I also like to go savory sometimes and throw in a handful of chives or something. I agree with you that Iowa cottage cheese is THE BEST. There isn’t even anything that comes in a close second.

    AE cottage cheese is so good. I have tried the store brands but they are not good at all. I like to mix my cottage cheese with peaches. Or sometimes I sprinkle it with sugar and cinnamon.

    I enjoy cottage cheese, but I have to admit it took me a little while to like it. I think it was the texture. My favorite mix ins are either pineapple or strawberries. Plus, I love adding a dash of cinnamon every once in a while. Mmmm!

    I love cottage cheese with fresh-from-the-garden tomatoes and plenty of freshly ground pepper. Or, sometimes I like to dip mini pretzels in the cottage cheese. YUM!

    My favorite thing in the summer is to slice up some ripe tomatoes, salt and pepper them, dish out some cottage cheese and eat the whole combo with Triscuits! It’s the perfect summer meal in my opinion. If I have cucumbers, I’ll slice a few of those too!

    I love cottage cheese and I like to mix peaches in it. But I also like just some pepper and garlic salt if I’m in a hurry.

    I’m jealous of all the yummy produce. My mom gave me some when she visited but I haven’t gotten much else. I really need to grow some next year.

    i LOVED cottage cheese. I am now vegan.. and have still yet to master creating my own vegan cottage cheese.
    My favorite cottage cheese mixture was actually putting it in yogurt. Or with a drizzle of honey and cinnamon! Really yummy! :)

    I adore Cottage Cheese, but only a certain brand called Lite and Lively. It’s funny how different the taste can be between different brands- it’s like an entirely different experience. I also gag at FF cottage cheese but 2% milk is just too rich, so I find the 1% milk cottage cheese is perfect.

    I eat this every morning mixed with a little SF Jam and top it on toast. Or, just plain old cottage cheese on a slice of warm toast is also perfection.

    I’ve always been a huge fan of AE Cottage Cheese. It was the only brand I would eat. That is, until I tried the cottage cheese that Costco sells – it’s even better (creamier maybe, and a little richer, if you will)! It’s a big tub, obviously, but if you store it up-side-down, it lasts much longer than it’s expiration date states.

    I just checked – it’s Land O’Lakes. and it’s goooood!

    First off – love your blog! Just read this post and wanted to let you know that throwing some canned diced green chilies in with your tomatoes and cottage cheese is FANTASTIC!!! That’s really the only way I can eat CC – love the flavor combo.

    I use the fat-free kind – I don’t know if I’ve ever tried the low-fat type… But, I can assure you, that the fat-free variety is incredible!!
