Hey everybody! How’d your Thursday go? Good? Great
Tonight I took a break from the 101 Simple Salad Challenge (I know, I’m upset too) and took the uber easy route. I swung by Costco after work (UGHHHHH, love that place so muuuuch) and picked up a fresh rotisserie chicken to play starring role in tonight’s dinner.
Isn’t she a beaut?
I just adore Costco’s rotisserie chicken. First of all they are huge, second of all they are $4.99, third of all they are one of the tastiest things ever and fourth of all you can use them in so many different ways! Including, but not limited to:
- As-is
- Cubed and tossed into salads
- Shredded and mixed into soups
- Chopped and added into casseroles
I just love any food that boasts that kind of versatility, don’t you?
Tonight I ate a thigh and wing with the skin ON – GASP! In my opinion, if you’re going to eat rotisserie chicken, you just have to. It’s the best part!
Now I am NOT a picky eater in any way shape or form (except for cooked carrots and bell peppers,) so in general I like 99% of the things I eat. But when I have something that I really love – I mean REALLY love – I tend to yell out loud:
“I FREAKING LOVE (fill in the blank).”
I definitely yelled that tonight. Rotisserie chicken is…so…good.
I also tend to shout that about garlic bread, Australian licorice and Yoshinoya Beef Bowls.
To go along with my chicken, I made a big pot of brown rice simmered in chicken broth and the strained juices from the rotisserie container. O..m..g… It tasted like one of those Lipton Rice Sides that come in a pouch, except this was minus all the salt and preservatives!
I rounded out the meal with some freshly steamed green beans from my Mom’s friend’s garden. Holy cow, these were incredible!
Garden fresh is always besht.
No seasoning needed on these puppies. The natural flavor was just perfect.
So the plan for tonight is to go listen to my brother preach at his Thursday night service – which, hey guess what? You can too! Just go here to listen live at 7:27pm central time

What do I FREAKING love? Where to start. : ) Baked brie with just about any topping comes to mind…roasted root vegetables…grilled pizza…fresh sea scallops! (Made well, they’re almost better than chocolate!)
The Immersion service would be tempting, if I hadn’t just spent all day over at Hope – but I can’t wait for part two of the Leadership Summit tomorrow! Is that something your brother is participating in?

And I love rotisserie chickens. I work at Cub Foods part-time and we make them everyday, different flavors too. When they are on sale I could buy one everyday to put in som many dishes. My husband loves it on his pizza!

Haha, I LOVE Costco’s chicken, too! I usually HATE chicken skin, but theirs is pretty good! In fact, that’s the first part my hand reaches for.
I FREAKING love kabocha, oats, green tea, sweet potatoes, cheese, and fruits. And carbs!
I love rotisserie chicken too!! It’s incredibly versatile and a great thing to have on hand. I add it to pastas, quesadillas, sandwiches, stir-fries, the list goes on!

Costco’s rotisserie chickens are big, plump, and cheap. Love to make many many meals around it.
I freaking love sushi! Just got back from a sushi fest at Taki. Ate too much, but it’s not an every day thing, so a webgal has to indulge every once in a while.

My fiancé and I love those yoshinoya beef bowls too… I can’t wait to go back and get them – we even tried recreating it at home… it’s just not the same!

I don’t eat chicken skin, not for health reasons but because I don’t like the texture!
I love chocolate cake (home made!), summer fruit (pineapple, peaches, nectarines, mangos, watermelon…) and my Nana’s sponge cake with jam and cream.
I am crazy jealous of your dinner! I seriously adore Iowa veggies. my mom was just up there and brought me some sweet corn grown on the farm. Needless to say it was to die for!!
I just posted about my love for rotisserie chicken on my blog the other night! I actually made my own…so I guess I would call it baked chicken…but it totally tasted rotisserie. It was so freaking good, and if you’ve never made one yourself, you should! And I agree – you gotta eat the skin — live it up!

I freakin love… caramelized onions they make everything soooo good… and you’re right if you get a rotisserie chicken it’s against the rules to peel off the skin… look it up, I think it’s in the Constitution or something lol

I’m with you girl! I freakin love roast chickens from the store. Whenever I go to Whole Foods I buy one and use the meat for everything! Especially yummy sammies since I’m trying to cut down on all those deli meats! Great dinner girl!
I don’t remember how I came across your site initially, but every time I check in, I get hungry. There’s a Costco down the street from me with rotisserie chickens for sale, but somehow I’d rather just take a bite out of one of these delicious-looking photos. I freaking love chicken and green beans too!
