Hello!
Hmmm, well I haven’t quite figured out what to do tonight…but I did figure out what to have for dinner! That’s usually not too hard
Tonight I took the leftover rotisserie chicken from last night and shredded it, added BBQ sauce & shredded mozzarella cheese, then spooned it over some toasted bagels.
After a few minutes spent tanning under the broiler to melt the cheese and warm the chicken – my Open Faced BBQ Chicken Bagelwich was ready!
I definitely think my favorite use of leftover chicken is sha-redded. Shred baby, shred!
I said goodbye to the skin for dinner tonight, so this was all juicy, white breast meat.
BBQ sauce is definitely in my Top 3 condiment list – I seriously.love.it! Ben’s favorite sauce is Famous Dave’s Rich & Sassy, so that’s what I buy.
Oh – a couple people asked what brand of bagel I eat. I am definitely brand blind when it comes to bagels, so if I’m buying them I usually get what’s on sale. This week a pack of 1st National Bagel Company bagels were about $1.50 at the store, so that’s what I got! I actually really like them – they’re a great size (perfectly medium,) there are no funky ingredients in the ingredient list, and they’re made in Minneapolis – sweet!
This bagelwich was jawesome (just awesome) and a perfect way to start my weekend. Now I just have to figure out what to do with it!!

Do you prefer bagels, english muffins, bread or something else?
I like the chewiness of bagels but darn it, I love me some EM’s too! In the end, I think I’ll go with bagels because of all the different varieties: Cinnamon Raisin, Blueberry, Egg, French Toast, Salt, Honey Oat, Everything…hello options!
