A Mediterranean Dinner – Opa!

Heeeeey Hey!

Well you’ll be happy to know that my car was in fact, not stolen, although I feel as though I’ve been robbed… The cost to fix a busted alternator was more than our Vegas Vacation! UGH. This is the reason why we save though, so the one glimmer of goodness out of this whole thing is that it shouldn’t affect our day to day lives that much. But still – knowing that I could have gone on vacation for the cost of a stinking car repair makes me really consider taking the bus from now on. Who needs a car anyways?!

Another glimmer of goodness = the Geisha prints from my birthday were ready today! I got them framed and they look just terrific :) Here’s a shot of one on the wall. There was an existing hook there from the previous owners (yes, I’m gangster and haven’t taken it out in the year and a half I’ve lived here) which actually worked out perfectly. Ben’s going to hang the other print underneath it tonight, and then my Lisa Kristine dreams will be complete :)

So a couple of weeks ago, packages of Jennie-O 99% fat-free lean ground turkey breast were on sale at the store for $2.99. STEAL! Those babies usually go for $5.99! I snatched up a couple packages with tonight’s dinner in mind: Greek Turkey Burgers.

I made these the same way as last time, except I didn’t have any frozen spinach on hand, so I chopped up a couple handfuls of baby spinach and sautéed them with ~1.4 diced red onion in a little non-stick spray.

I served my burgers over some more baby spinach and drizzled them with Bisignano’s Italian Dressing. A perfect Mediterranean combo :)

The Greeks know their stuff… Oregano, Thyme, Garlic, Sun-dried Tomatoes – OPA! (That’s Greek for yeehaw!)

I made four patties out of my Greek burger mixture, so each patty was 1/4lbs of guiltless, gourmet, goodness. 99% fat-free, lean ground turkey is dope.

I have a fabulous baking project to work on tonight…I’ll share in the morning – it’s going to be a good one (crossing my fingers, because I’ve never made it!!)

    I’m somewhat strange in my food preferences. I eat most animal products. The beef I eat comes from one place, my mother-in-law’s farm in Nebraska. We get a quarter of an organic cow every year to stock our freezer with. Portioned into hamburger patties, ground beef, steaks, and roasts.

    The other red meat I eat is bison and elk which normally are either hunted by my husband himself or friends of ours.

    I do not eat chicken or pork. Chicken because it hurts my stomach and pork because it makes me sad. :( I just think pigs are treated like complete shit (sorry) but it I just can’t stand to support that.

    I eat all fish and love all shellfish except for lobster….got food poisoning from it! Turkey, duck, quail, deer….bring it all on, I’m adventurous!

    I’ve been making turkey burger and turkey-related items every since your last turkey burger post. LOVE it. LOVE adding veggies to the mix. I add spinach and yellow zucchini…I’m going to have to try adding sundried tomatoes next. It’s a great thing to make and have to reheat or crumble onto a spinach salad!

    I only ate fish for about four years and recently added poultry back into my diet. I still don’t eat pork or red meat though and haven’t for about 15 years.

    I’m a pesticarian who loves cheese! I could never go full on veggie because I love seafood and cheese too much. I also enjoy the occasional greek yogurt.

    I don’t ever buy ground beef anymore — turkey tastes just as good to me. These Greek burgers look SO GOOD! Definitely trying this recipe — thanks for the idea!

    I love greek turkey burgers. Awesome tip for you, next time, try adding a little feta in the mix. It is AH-MA-ZING!

    I rarely eat meat but if I do, it’s usually not in it’s whole form. Like, I don’t think I could eat a solid peice of chicken but, if its ground like in a burger or chicken sausage, then I enjoy it.
    Not really sure what that makes me, but it sure does make me happy, so I guess that is all that matters.

    PS- I love the running tips from this morning’s post. I’m definitely an “all or nothing” runner, but I must try to remember a quickie run is better than no run.
