Hey buds!
Well, I have had a productive day! Checklist:
- Work – done
- Pumpkin Spice Latte – drank
- It was soooo good – everything I could have hoped for, and more!
- De-humidifier – installed
- If you need one of these guys, I suggest buying one soon, as they are all on sale/clearance for the season. I got one that was originally $199 for $100!
- Kitchen – cleaned and sanitized
- Walk – walked
- 4.25 miles in just under an hour. My ball & socket joints will be sore tomorrow, but it was so insanely gorgeous out!
- Dinner – eaten
We had Crispy Tilapia Filets!
Remember when my Mom and I split that big package of fresh Tilapia filets from Costco? I made a portion of mine the “Old Bay Way” and she made hers dredged in light & crispy panko bread crumbs. Her description of it the next day sounded so delicious – I knew I had to steal the idea!
The Ingredients:
- 2 fish filets
- flour (not pictured)
- pepper
- 2 egg whites
- panko bread crumbs
- Lemon Pepper seasoning
- garlic powder
- onion powder
- olive oil (not pictured)
Directions:
1. Get out three bowls. In one bowl combine flour & pepper. In the second bowl, whisk 2 egg whites. In the third bowl combine panko bread crumbs and seasonings listed above.
2. Take your fish filets and dredge in flour & pepper mixture on both sides. Tap off excess flour and transfer to egg whites. Dip both sides of filets in whites until coated. Transfer filets to panko & seasoning mixture and coat both sides.
3. Heat one tablespoon of olive oil in a skillet and sauté the filets for ~3 minutes on each side.
Presto!
CRUNCH-TASTIC! Seriously panko bread crumbs are one of the best things in my pantry. They are so crispy and crunchy, I’d swear this was fried. Thankfully, nothing is fried in the IGE household. No way, no how.
I also steamed some Fresh Green Beans to go along with the crispy filets. I like my green beans steamed until they’re pretty soft. Think canned green bean, soft. How about you?
Do you guys ever use panko bread crumbs? I just love “fake out” meals like this – all the fun of crunchy fried foods, but without the artery clogging health hazards!!

Oh, I got a couple questions today that I seem to get on a regular basis, so I thought I’d just share with you all!
1. Don’t your apples turn brown when you take them for lunch?
If you put them in gladware/tupperware container or a plastic baggie, no they really don’t turn all that brown. But even if they do – the brown is purely cosmetic. It doesn’t change the taste of the apple at all!
2. Do you use dressing on your salads?
Yep I do. Usually is a light Kraft variety of dressing – House Italian or Roasted Garlic – that I usually “dilute” with balsamic vinegar. It takes away the “bottled” dressing taste and extends my dressing so I get more salad coverage without adding too many more calories!

Your dinner looks fabulous! I love “fake-frying” with panko and do it all the time. My favorite dressing right now is hummus mixed with balsamic vinegar, it’s creamy, incredibly tasty and low cal!
Great dinner! I do that with tilapia fairly often, and its always SO GOOD. Sometimes ill put Parmesan in the crumbs too. Salad dressing: Penzey’s green goddess mix made with fat free mayo and balsamic. SO GOOD

I love using whole wheat panko. Ever since I’ve discovered them, I don’t think I can go back to regular bread crumbs. I just love how crunchy the panko gets.
My favorite salad dressing is a simple mix of balsalmic and a little whole grain dijon. I also add a bit of Agave or honey to balance it out. It’s perfect!
My favorite salad dressing is a brand called Ken’s and it’s Light Sweet Onion. It’s so good. It doesn’t even really taste like onion.

My favorite salad dressing is balsamic vinaigrette! Light, yet so flavorful.
I’ve found that squirting a little bit of lemon juice into my baggie/tupperware with sliced apples keeps them from browning! I just did this for my lunch yesterday, in fact.
i have NEVER used panko. I should buy some soon.
I use panko in my oven-fried green tomatoes – awesome! Have also started making my own (sort of) – I save the heels and ends of whole grain bread, crumble in the food processor, and when I get a baggie full in the freezer, I dry them out in a low oven. That way they’re free! Or darned close
I love to make my own salad dressings & get creative — 2 of my faves are blue cheese vinagrette (1 part blue cheese dressing, 2 parts white vinegar, sugar to sweeten) & pesto vinagrette (1 part pesto to 1 part balsamic) — yum!
I miss PSL! There’s dairy in the syrup (ditto for white mocha syrup . . . but not regular mocha!) so no pumpkin spice goodness for me. Although Silk does come out with a soy pumpkin spice drink in the fall . . . can’t wait!
I had a very similar dinner tonight…. panko crusted haddock w/ green beans and tomato salad.

The salad dressing I use is called Albertson’s Poppyseed dressing and I can only ever find it in Iowa or Missouri, it’s so good but I only use a little!

I used to never use dressing, but then I discovered Annie’s dressings! My favorites are Goddess and Woodstock. Salsa and hummus work well too!
Oooh my favorite dressings are some in TJ’s fridgerated section – Raspberry Walnut Gorgonzola, Pear Champagne & Spicy Peanut Asian. Sooooo good!!

The fish looks great! I have panko crumbs, but I haven’t used them yet! I need to get on that.
I like my green beans crispy. I like to roast them like asparagus.
I’m usually just a plain balsamic vinegar gal, but last night I made a dressing out of half an avocado and 2 spoonfuls of vanilla yogurt. It was delicious!
That looks like a great recipe, I might just have to give it a try very soon. Anything with lemon pepper is good in my book.
