I switched it up a tad…I’m blogging from the couch this evening! Here’s my view. That up there is the kitchen table where I’m usually parked and typing away

Oh ps, in case you were wondering – this morning’s Breakfast Cookie held me over SO well! In fact, I didn’t get hungry until 12:30! Unfortunately I am out of fresh bananas, so b-fast cookie round 2 will have to wait for another day. Rats…
So tonight’s dinner was something that I always get excited to eat. Teriyaki Chicken with Nectarine Salsa!
I suppose I should clarify – I don’t get excited to eat chicken (does anyone?! I mean I like chicken, but I don’t get excited per se…) anyway, I do get excited to eat fruit salsa! I love the combo of sweet & spicy you get when mixing ingredients like fresh nectarines and jalapenos.
I started dinner by marinating some chicken breasts in Kikkoman Teriyaki sauce (you can make your own by combining 2 parts each mirin & soy sauce, to 1 part white sugar) for about 15 minutes in the fridge.
When marinating time was up, I sautéed the breasts in a skillet that I had sprayed with some non-stick spray, for about 4 minutes a side. Meanwhile, I gathered the ingredients for my Nectarine Salsa!
I based it off my recipe for Pineapple Pico de Gallo – and combined:
- 1 nectarine, chopped
- 1 jalapeno, minced
- 1/4 small red onion, minced
- handful of cherry tomatoes, quartered
- sprinkle of dried cilantro (fresh is best, but i only had dried!)
- juice of 1 lime
- S&P
Stir everything together and you’ve got yourself a custom, flavorful, EASY fruit salsa my friends! Served with a side of fresh broccoli crowns – why, my taste buds were in Heaven this evening
This salsa is also fab with tortilla chips or as a salad topper!
Dessert = Extra Long Twizzlers. Ben’s Mom bought these for us because she knows our favorite sweet treats are Twizzes…thanks MIL!!!
ps recognize my shirt?! It’s from my VEGAS TRIP! I miss Vegas…I think the slot machines miss my nickels too…
Wish me luck in not eating too many Twizzlers…these bad boys pack a walloping 160 calories in TWO ropes!! Two! I could eat about 15 of these!! I won’t though – 3 max and they’re banished to the kitchen for the rest of the evening
