I switched it up a tad…I’m blogging from the couch this evening! Here’s my view. That up there is the kitchen table where I’m usually parked and typing away :)

Oh ps, in case you were wondering – this morning’s Breakfast Cookie held me over SO well! In fact, I didn’t get hungry until 12:30! Unfortunately I am out of fresh bananas, so b-fast cookie round 2 will have to wait for another day. Rats…

So tonight’s dinner was something that I always get excited to eat. Teriyaki Chicken with Nectarine Salsa!

I suppose I should clarify – I don’t get excited to eat chicken (does anyone?! I mean I like chicken, but I don’t get excited per se…) anyway, I do get excited to eat fruit salsa! I love the combo of sweet & spicy you get when mixing ingredients like fresh nectarines and jalapenos.

I started dinner by marinating some chicken breasts in Kikkoman Teriyaki sauce (you can make your own by combining 2 parts each mirin & soy sauce, to 1 part white sugar) for about 15 minutes in the fridge.

When marinating time was up, I sautéed the breasts in a skillet that I had sprayed with some non-stick spray, for about 4 minutes a side. Meanwhile, I gathered the ingredients for my Nectarine Salsa!

I based it off my recipe for Pineapple Pico de Gallo – and combined:

  • 1 nectarine, chopped
  • 1 jalapeno, minced
  • 1/4 small red onion, minced
  • handful of cherry tomatoes, quartered
  • sprinkle of dried cilantro (fresh is best, but i only had dried!)
  • juice of 1 lime
  • S&P

Stir everything together and you’ve got yourself a custom, flavorful, EASY fruit salsa my friends! Served with a side of fresh broccoli crowns – why, my taste buds were in Heaven this evening :)   This salsa is also fab with tortilla chips or as a salad topper!

Dessert = Extra Long Twizzlers. Ben’s Mom bought these for us because she knows our favorite sweet treats are Twizzes…thanks MIL!!!

ps recognize my shirt?! It’s from my VEGAS TRIP! I miss Vegas…I think the slot machines miss my nickels too…

Wish me luck in not eating too many Twizzlers…these bad boys pack a walloping 160 calories in TWO ropes!! Two! I could eat about 15 of these!! I won’t though – 3 max and they’re banished to the kitchen for the rest of the evening :)

    If I’m at home, I blog from the couch. If I’m at work then I’m in my office! Your chicken looks delish! I love chicken but it’s not always the most exciting thing. Your topping looks really good! I love topping chicken with really fresh ingredients like that! Whoa those twizzlers are long!

    I’m a total couch blogger. I read blogs at the table over breakfast, but I do my blogging on the couch at night.

    I’m with you! Dessert is a must…seriously, there is just no questions when it comes to something sweet to end the day. It’s beyond a want, it’s essential in my life! ;)

    i don’t always have DESSERT per se, but I usually have something after dinner. Some times it’s sweet (chocolate, fruit, smoothie, etc), sometimes it’s salty (popcorn…usually)

    I am a couch blogger too. I may have to a do a couch view ‘post’ at some point :)

    Dessert is a must for me every single night, no questions asked. Tonight, I’m not quite sure. I usually decide and then change my mind :) But I am thinking some yogurt and cereal mixed together!

    Delicious looking salsa!!! I love peach mango salsa so I’m sure nectarine salsa would be beyond good. Haven’t had dessert yet tonight, but I’m heading to a BBQ where there will be ice cream & cookies! And I have strawberries in the fridge for my return home :-)

    Nice to change it up some days. I normally blog in my office but occassionally I blog from my couch too.

    Tonight I had far too much chocolate for dessert…hence the chocolate coma I currently have.

    Blogging happens all over the place with me.. my desk, the couch, the porch, the airplane, the coffee shop.. school.. class (!!).. no where is off limits! ;) That makes it seem like I post super often, but I don’t.. it’s just wherever I am when I can fit it in!

    Hmm.. the question is not what was desert, it is which dessert! I had a orange soda float after dinner, but right now I am munching on smores goldfish (new!!) that are booomb. I recommend. Very. Much.

    Nectarine salsa sounds and looks so good. I love the bright colors in the meal (especially the green, green brocc!).

    I don’t eat traditional dessert too often, but I love a bowl of yogurt with granola or some chocolate chips on my oats…does that count? :-)

But definitively I bring about this locate selling them as a remedy for half price. I really like those prada sneakers. I will probably buy these. what do you think?

But definitively I bring about this area selling them for half price. I in reality want those prada sneakers. I will absolutely purchase these. what do you think?
