One of the first blogs I started reading when I got into Food/Health blogs was The Fitnessista’s, and one of the things that I have always been SO curious about is something she makes called a Breakfast Cookie. I often wondered to myself, “Is it a cookie? Is it breakfast? Who cares – it’s cookies for breakfast!” Well, kind of…

You see, her incredible breakfast cookie recipe combines oatmeal, bananas, milk, spices, nut butter and protein powder, that you let sit in the fridge overnight. In the morning you’ve got this amazing, soft, doughy “breakfast cookie” – mmmm…

Just one thing though…iiiii don’t really do protein powder. To me, it’s confusing – there’s so many varieties, what if I get it and hate it then I’m stuck with a giant tub of it, etc. Well, another blog I read regularly – Vitamin Grecently teamed up with the Fitnessista and released an adapted Breakfast Cookie recipe without protein powder – SWEET! My breakfast cookie prayers have been answered!

Per the directions, last night I combined:

  • 1/3 cup oats
  • 1 Tablespoon peanut butter
  • 1/8 cup skim milk
  • 1 mashed banana
  • Dash of cinnamon
  • Drizzle of honey

I formed the mixture into a big cookie shape on a plate, wrapped it up tight with plastic wrap, popped it in the fridge and hoped for the best.

This morning, I took the “cookie” out of the fridge, topped with some fresh raspberries & blueberries, grabbed a spoon and dug in…

The verdict? Awesome…awesome!! Like eating cookie dough!

All the ingredients seem to work together overnight to make this congealed, dough-like, “cookie” that is seriously scrumptious!

The cool thing about this recipe, is that you can totally customize it. You just need about 1/2 cup of something to hold everything together. I used banana, but you could probably use pumpkin, applesauce or other dried fruit in there too! I’d also love to play around with the spices. I’m thinking pumpkin pie spice would be deeeelightful :)

We’ve got a Carrot Cake CLIF Bar + Lemon Chiffon AE Yogurt + Peanut Butter Filled Pretzels + Sliced Zucchini. Random, but delicious!

I.love.peanut.butter.filled.pretzels. These are one of the goodies that Ben brought back from Trader Joes in Chicago and they are JUST the best! I like to crack them open with my teeth, eat the peanut butter and then eat the pretzel. Kind of like how you would eat sunflower seeds if you ate the shell. :)

I also read last night from Holly that she’s warmed up her Carrot Cake CLIF Bar with fantastic results…hmmm, yep – definitely going to have to do that today!

One more work/school day people (well, after today) – have a fab Thursday!

1. 2 words: Gossip Girl. Leighton Meester is a genius.

3. Always chocolate, except for ice cream and frosting.

    1. this is a toughy! i was reviewing the fall schedule, and I’m gonna have to say….Ugly Betty (even though the show got moved to thursday, and we all know what that means!) it’s funny, dramatic & i just enjoy it. Gossip Girl is a close 2nd though (but i always DVR it, never watch it when the show is on!)

    I love breakfast cookies! I bought some samples of PP to make them, but they are $$$ and I’m pretty sure I get enough protein in my diet without it. Good to know I can forego the powder!!

    1. GOSSIP GIRL – all the way! I love their clothes. And their hair. And Blair just cracks my s&^* up! Also excited for House, Grey’s, and The Office.

    breakfast cookie = delish. sometimes i just omit the protein powder too, and oh, is it still fabulous!

    (1) The Office. hands down. favorite. and Glee – i watched the pilot episode, and it looks sooooo good!

    yum, aren’t bfast cookies awesome? I usually do 1/2 cup oats, 1 Tbsp nut butter, cinnamon, vanilla, banana OR a few spoonfuls of applesauce – then top with fruit and ricotta :)

    Hey dear! I made a breakfast cookie this morning too! You should check out my post :) It was delicious! A total winner. I customized mine for the first time this morning, attempt #2, total success!

  22. Your breakfast cookie looks delish! I’ll have to give it a try. I’m with you on protein powder, it’s not really my thing. All of the varieties I’ve tried taste sort of funky to me.

    I can’t think of any shows I’ve been waiting for. I tend to get hooked on a show and then watch the entire season at once rather than following it each week.

    Those peanut butter filled pretzels are great, I love them. I am someone, like you, who doesn’t have a TJ’s nearby, so they become a rarity in life.
