The Tale of Two Breakfasts

49

Tale 1:

I’m getting ready today and thinking to my myself, “Hmmm…what should I have for breakfast today? A Green Monster is out because there’s no nut butter in the house…there’s no breakfast cookie waiting for me in the fridge…well, it is Friday, so maybe I could make something a little extra special? Eggs & Toast? Nah. Oatmeal? Nah, plus no bananas. Ding! French Toast! With Berries! Sprinkled with Powdered Sugar!” I was so excited at the prospect, I even whispered a little “yes!” to myself.

What, you don’t get this involved in your breakfast decisions? :)

I came out to the kitchen, whipped up my egg whites with some milk, spicy cinnamon and sweet vanilla extract. I heated up my skillet, got my berries all ready to go, then I opened the pantry door to get the bread. Wait, where’s the bread…where’s the friggin’ bread?! I went to ask Ben and he said “It’s gone bad…” What? Noooo! Just like that, my sweet, sweet Friday french toast dreams went down the drain.

Tale 2:

After I dumped out my poor, sweetened egg whites and put away my delicious berries for another day, breakfast idea #2 was decided: Egg & Cheese Bagel Sandwich!

IMG_8228

Ok, maybe not as decadent as my original french toast dish – but a toasted bagel, melted cheese & fluffy egg whites make it a close competition for my heart!

IMG_8239

This was perfectly filling and yes, it was a little special for a Friday morning!

IMG_8236 IMG_8238

I also had a Red Bartlett Pear for some freshness. I feel like pears are the forgotten fruit. Do you eat them often?

IMG_8234

I’m going out to lunch today with some co-workers – love Friday lunches out. Perhaps we’ll sit in the sunshine on a patio?!

Have a fab Friday everyone!

~~~~~
You know what I’ve often wondered?
What do you all “do”? As in, what’s your occupation? Student, nurse, IT technician, marketing manager, full-time Mom/Dad/Grandma/Grandpa?
I work in the Internet/Interactive industry – I dig it!
    Next time you have no bread for french toast, use any other kind of bread. I’ve used bagels, eng. muffins, frozen waffles. Also, I always throw the leftover egg/milk mixture into the skillet after I cook the bread. Cinnamon sweetened eggs are awesome! Sometimes I even toss in some banana slices and cook them into the eggs. Don’t knock it til you try it!! ;)
