That Deserved the “S” Word

The Good News: I witnessed one of the most gorgeous sun rises on my way to work this morning…I let out an audible “wow!”

I also broke my recent exercise slump by getting out for two walks today and running three miles after work! :)

The Bad News: The run sucked. That’s right – I used the “S” word. It sucked hard. Remember when I said if you don’t use it, you lose it? Well, I have not been “using” it enough the past two weeks, and I definitely felt the effects. I never wanted to quit, but that three miles was way harder than it should have been. In the spirit of 101 Greatest Running Tip #62 though, I stewed about it while I finished up my last quarter mile, while I slammed some ice water that Ben had waiting for me at the door (aww) and while I showered. Then, I moved on and committed myself to being more consistent in my running, in the future.

Theeeeen, I made dinner! Turkey Sausage Breakfast Frittata!

I followed my basic frittata recipe, but made the following adjustments:

  1. I cooked two of my lean, Sweet Turkey Sausages out of their casings and crumbled.
  2. I used 2 handfuls of frozen hashbrowns instead of pasta, which I cooked up for a few minutes with some ice cubes until they were soft. Then I threw in a couple handfuls of fresh, baby spinach and let them wilt for ~1 minute.

Other than that, the recipe was the exact same. Topped with some sliced cheddar cheese – FAAAAB!

I am just in love with this turkey sausage – there was literally not a drop of excess grease or oil when I cooked it up.

The hashbrowns and parmesan cheese in the eggs made this creamy and filling.

Love, love, LOVED this dish!! I had two slices, which was a quarter of the recipe…but I think I’ll be going back for more in a squinch ;)

Since the Miami Hurricanes are playing tonight, Ben made a “game day” dinner of frozen pizza. I had a couple pieces because, fun fact: I love frozen pizza. I would rather eat frozen pizza than delivery…is that weird?

    Are you gonna be able to watch “the office” with the game on? there is nothing allowed on in our house when the ‘canes play. You know, just in case he has to go to a different room or something… crazy!!! Your frittata looks AWESOME! Enjoy the office… I’m sitting here in the world of pseudomiami.

    btw.. we use Wright’s cooktop cleaner…. always works great!

    Sorry about the sucky run today. I did a very sluggish 3-miler today, and made the following excuses for myself: I ran a half-marathon 4 days ago :) , didn’t get enough sleep last night, and didn’t drink enough water today. Hopefully your next run is better!

    That frittata looks delish! I love eggs for supper.

    I don’t get to watch The Office, or, for that matter, any other TV besides the Disney movies and kid’s shows that my kids watch! Ah, the sacrifices of motherhood. :) Although I must say that I’m a fan of Jenna Fisher b/c she hails from my home state of Missouri (St. Louis to be specific)!

    I use “Cook Top” cleaning creme for my glass-top stove. We got it at Sears when we bought our stove. It’s in a white bottle with a black label.

    You’ll get your groove back, don’t worry! But I totally agree, I find if I don’t keep up with my running, my booty totally gets kicked :(

    I had breakfast for dinner as well! Your frittata looks dannng good. Turkey sausage, parmesan and hash browns? YES PLEASE!

    While I would rather have delivery pizza than frozen pizza, I do agree that there are some great frozen pizza’s out there! Do you have a favorite kind?

    I got my cleaner from Sears when I bought my new flat top and it works wonderfully. Don’t you just love fritattas? Yours looks awesomely deelish — hope you aren’t being too disturbed by the hubby’s football craziness tonight haha (loved the tweets p.s.) :)

    Love love LOVE the Office! I really like Jim because of his sarcasm, but Meredith’s oddities are hysterical as well.
    Try Bar Keeper’s Friend for cleaning a flat top stove. It comes in a powder and a liquid cleaner-not too big of an $investment$ too. My husband (who was a bartender in college) bought it and we were always happy. It works in many areas of the kitchen/house too-sink, counters, bathroom fixtures…The key is using the right amount of the powder or you rinse a lot. This summer we moved and now have a gas stove :( which is WAY harder to keep clean. I miss my ceramic cook top.

    Flat top stove cleaner – i use a generic magic eraser sponge and the cleaner Easy off makes. Spray it on, let it sit for 5-10 minutes while I wipe up the rest of the kitchen, then take the sponge to it and it comes out looking great.

    I’m with Amanda, Barkeeper’s Friend stove cleaner, I use the liquid and it works great – also works great on stainless steet sinks. You can buy it at Bed, Bath/Beyond, pretty cheap and lasts a long time.

    I LOVE The Office! I probably laugh the most at Dwight. I think Rainn Wilson is seriously overlooked come Emmy time. I really like Jim, too. His expressions are perfect sometimes.
