oooomg. Omg? OMG! Dinner was a decadent, dessert lovers dream tonight!
This was not oatmeal that kind of tasted like pumpkin pie, or oatmeal with a dallop of pumpkin in it…this was literally like eating a big, warm, sweet slice of pumpkin pie…for dinner. A little unusual, yes, but sometimes you’ve got to mix it up – know what I mean?
I followed Katie’s recipe to a T – except I did not use the optional flax, and I used sliced almonds instead of walnuts. Oh, and I made this into 2 servings instead of 4, because I wanted a bigger, dinner-sized portion. :)
Warm, pumpkiny, crunchy, sweet HEAVEN – all for 375 calories!
I ate this as slow as humanly possible, so I could savor every warm and delicious bite. It truly was like eating a slice of Mom’s homemade pumpkin pie, but it had a mere fraction of the butter and sugar that usually goes into the Thanksgiving staple. Plus it incorporated heart healthy oatmeal and vitamin-rich pumpkin!
I was this close to dalloping a scoop of frozen vanilla yogurt on top…but I stopped myself. It would have made this dish a little too much like dessert and it would have masked the crunchy, glazed almonds that were daintily sprinkled on top!
Katie’s got a winner on her hands with the recipe, folks. Whether you eat it for breakfast, dinner or even dessert – you’re going to love it, I promise!
In other news, all that talk about Halloween candy this morning gave me a hankering for something sweet this afternoon (mmm…yeah, this was before I decided to have pumpkin pie oatmeal for dinner…) This hankering could only be silenced by a Reese’s Peanut Butter Cup, so I had 3 minis.
Afterwards I googled “calories in a mini reese’s peanut butter cup” and clicked on the first search result. Guess who I was assaulted by:
Jillian!! I was all – “Come on Jillian, it’s not as bad as you think. It was just three minis.” She was all – “Who cares! Biggest Losers do not eat Reese’s Peanut Butter Cups!” Then I was like – “Too bad, I love them.” Ahh, nothing like being slapped in the face by a big weight loss add after you just crushed some candy. Mini Reese’s Peanut Butter Cups have 33 cals/piece, FYI. :)
So, sugar consumption is slightly high today and veggie consumption is kind of low. It’s ok though – big salad packed for tomorrow.
