I’m not one to gloat – but, how ‘bout those Hawkeyes?! They totally knocked it out of the park stadium in the second half of the Penn State game last night – whoop! I also loved how when they showed the players celebrating, you could just tell they were from Iowa. They just had that Iowa look. I love that
Mumsie’s birthday celebration was a big success too! We got her a mini food processor, so she can make her own banana custard, and a new digital camera! Basically, it’s the upgraded version of mine (Canon SD1100 Digital Elph) and I am wicked jealous. Of course we also had our traditional Pepperidge Farms birthday cake…can’t get anything better from the freezer isle than this cake, people!
Finn wished his Grandma a very happy birthday as well. It was sweet
Oh FYI – that Creamy Pickle Dip was a HIT. I would recommend eating it with Triscuits, as you couldn’t really taste it through the flavor of carrots & celery. Try it out though, it is SO good!
Well today has been one of those absolute perfect Sundays. I woke up naturally around 7:30 to the cool air drifting through my open window. I put on a sweatshirt and embarked on a 3.5 mile walk through the trail where the leaves are already changing colors and tumbling to the ground.
When I got home I knew exactly what I wanted to make: Pumpkin Pie Pancakes. Ever since my brush with Pumpkin Pie Oatmeal earlier this week, I haven’t been able to get the flavors out of my head!
Ingredients:
- 1/3 cup pancake mix
- 1/4 cup canned pumpkin
- 2 tsp brown sugar
- 1 tsp butter/margarine
- 1 egg white
- dash of pumpkin pie spice
- dash of cinnamon
- splash of vanilla
- Water
Directions:
Mix all ingredients through the vanilla together, then add splashes of water until you come to a pancake batter consistency. Cook, top with syrup and enjoy!
These were so thick and fluffy – and the aroma of pumpkin pie filled the entire kitchen when they were cooking up.
I’m so glad I’m bringing pumpkin into my life. A loooong time, PB (pre-blog), I put a dallop of pumpkin into my oatmeal and I hated it. I think it’s because I didn’t add any additional seasonings such as butter or sugar to it. You only need a tiny bit, but it really does make all the difference!
Look at how fluffy these babies are!
This recipe makes 3 good sized pancakes, all for 225 calories!

Well this afternoon my Mom and I are headed to Wicked for her birthday!! I just couldn’t be more excited – I have heard AMAZING things about the show and I know this will be a perfect way to spend my Mom’s birthday with her. HAPPY BIRTHDAY MOM!

I saw Wicked 5 years ago, can’t believe it was that long ago, and it was absolutely amazing. By far one of my favorite musicals!
I was pretty impressed by those Iowa Boys myself last night. Congrats to them! I made some pumpkin oatmeal pancakes yesterday for breakfast (did you know yesterday was national pancake day?). They were so yummy. And I love pumpkin oats. My husband bought me tickets to see Wicked in November and I’m so pumped already! Enjoy! And happy birthday to your mom!

Pumpkin pancakes are by far my favorite type of pancakes. Have you tried sweet potato pancakes too? They are a good second in the off season.
