Try it Roasted!

YOOOOOOOooooo!

Ahhhh I made it to the gym after work – it was glorious. Sometimes I really just can’t bear the thought and other times I’m like – “Yeah! I’m at the gym, I’m running – I LOVE this!” Thankfully, today was one of those days :) I ran for 33 minutes at 6.5, sprinted for 2 minutes at 7.0 and walked for 10 minutes at 4.0 with a 5% incline. Total mileage: 4.5 miles. Feelin’ good.

I hit the proverbial “easy” button for dinner and jazzed up a box of Annie’s Whole Wheat Pasta & Alfredo with some Roasted Veggies. Oh yes.

When you feel like eating something cozy, but don’t want to make anything from scratch – I think Annie’s Mac & Cheese is a great option.

To go along with my Mac, I roasted some Cauliflower and Asparagus for bulk and because roasted veggies are zee ’ish.

All I did was toss one head of cauliflower with 1 tablespoon extra virgin olive oil, garlic salt and pepper, then roasted in a 400 degree oven for 40 minutes stirring half way through.

I also tossed one bunch of asparagus with 1 teaspoon extra virgin olive oil, garlic salt and pepper, and roasted for 12 minutes stirring half way through. I added the asparagus pan into the oven when the cauliflower had 12 minutes left, so they were done at the same time.

The veggies came out peeeerfectly golden – YUM!

If you think you don’t like cauliflower – try it roasted. I am telling you, I would eat anything roasted…well not carrots, mushrooms or bell peppers…but ANYTHING else. It adds such a depth of flavor that you really can’t achieve by cooking veggies any other way.

The asparagus got super tender but kept a slight bite – perfection!

Ok – this Annie’s Whole Wheat Pasta & Alfredo – is BOMB! My favorite kind so far! And look at these cute little DW heads – you know, Arthur’s sister?!

What food will you not eat, even it were roasted?

Literally the only foods that I can think of that I won’t eat, are listed above. Cooked carrots, bell peppers and mushrooms. Can’t do it! It’s a texture thing!

    Those Arthur mac and cheeses are too funny. I’ve heard of roasting Broccoli from Melissa de Arabian to change the flavor slightly

    I made roasted cauliflower a few nights ago. Yum. Umm, I can’t think of any veggies that I wouldn’t eat, although I’m not a big fan of eggplant or asparagus, both of which are being roasting veggies.

    I will not eat cauliflower even if it is roasted. I’ve tried it mashed, in stuff, roasted and it all tastes weird. I can’t eat poor little bleached trees.

    I have such a similar dinner planned this week. Annie’s Mac and Cheese is the PERFECT go to comfort meal that you can seriously whip together in 10 min. I love making huge veggie mac bowls, and usually add spinach, to the mac and cheese for even more volume and flavor. I bet it would be great in the Alfredo flavor! Other great veggies to try roasted with your mac and cheese, broccoli, zuchinni, and sweet potato. Ultimate comfort veggies to go with the ultimate comfort food.

    Okay, and now that I’ve spent a good 5 min raving about mac and cheese…I’ll stop. LOL

    i LOVE roasted veggies :)
    Try broccoli with lemon juice.. then roast it. AMAZING.
    and roasted cauliflower with ketchup.. tee hee.

    veggies i HATE are corn and green beans. no matter how it is cooked. bleh bleh bleh!

    Oh, Annie’s is the bomb! I haven’t tried that variety though, I need to pick some up though after seeing this post.

    I am really loving roasted veggies around this time of year! I made roasted beets (yikes!) tonight and they turned out absolutely wonderfully (my boyfriend wouldn’t stop eating them, that always says something with veggies!)… I need to def try roasting some cauliflower since we hardly ever seem to eat it and probably should :)

    Yum, I have a whole head of cauliflower I should roast up! I adore roasted brussels sprouts but haven’t really tried anything else. And I agree, cooked green peppers are intolerable, but I love them raw, so nice and crunchy!

    I always thought I hated asparagus – until I ate it roasted one time. I had never had anything but canned asparagus before (how my mom always served it). But I’ve been an asparagus fan ever since I learned how delicious it is roasted. Now I need to try roasted cauliflower – your pictures look awesome!
