The Ultimate Breakfast Sandwich

Guess what?! One of my Pumpkin Pie Pancakes pictures got accepted at Food Gawker! I’m so excited – I love taking pictures of my food, and to be able to share with the world via a big site like FG is really, really cool. Just wanted to share ;)

So second day Shred soreness has kicked in BIG time! My inner, right thigh is SO sore (hello, left thigh? Did you not work as hard? Shame.) I still wanted to get some exercise in since it was raining during my morning Mom walk time today, so I hit up the treadmill after work for a 40 minute walk at a 4% incline. Eh, I was kind of irritated that the walk wasn’t a run – but I didn’t want to further aggravate my thigh. We’ll call it good enough. :)

So I’ve been craving breakfast foods for dinner lately, and the craving emerged with a fierceness again tonight. I threw up my hands, obliged and made a Homemade McGriddle Sandwich!

I started by toasting up a 1st National Wheat & Honey Bagel.

Then I whipped up 2 egg whites + 1 whole egg + S&P + hot sauce.

Tip: hot sauce in eggs is KEY – a tip that I’ve recently picked up from Ben. (Marriage – you learn something new everyday!) The hot sauce doesn’t make your eggs hot, it just gives them an amazing flavor. Give it a try!

I zapped a couple pieces of center-cut bacon in the microwave, nabbed a slice of American cheese and assembled!

So WHAT, you may be asking, makes this sandwich a McGriddle?! A secret layer of sweet syrup on the bottom half of the bagel!

Ummm…I’ll never be eating another breakfast sandwich without my secret layer – it was pure.deliciousness. It mingled with the already lightly sweetened wheat & honey bagel, salty bacon, melty cheese and ultra flavorful eggs, to make the Ultimate Breakfast Sandwich!!
