Hi guys!
Well I had another hot date with the treadmill today – it was killer and I was dah-ripping in sweat by the time I was done! 3.6 miles in 30 minutes at speeds ranging from 6.5-6.8, with a two minute, 7.3 sprint at the end. Rounded out by a 10 minute cool down – I totaled 4.05 miles in 40 minutes. Loved it!
Tip: If you’re on the treadmill and you feel like you need to quit – aka your body is fine but mentally you feel like quitting – try taking your speed UP a notch. Yes, UP! The change in pace kick starts your body – it’s actually really cool!
So, dinner tonight was an unexpected delight! Spicy Sweet Pork Tenderloin.
I had actually planned on making a Cuban, shredded pork dish in the crockpot today, but I never got around to getting everything ready for it last night. Instead, I decided to do a pork tenderloin recipe search on CookingLight.com and ended up making the first recipe I clicked on. AND I had all the ingredients already on hand – BOO YAH!
The sauce drizzled on top combines a soy sauce marinade, with fresh salsa and raspberry preserves. Ok. I would have never in a million years thought to put these flavors together, but let me just tell you – it was SO GOOD. So good! You’ve got to give this a shot!
I thought I had some couscous to serve along side this, but apparently I ran out and nobody informed me.
So I improvised with half a Honey Wheat Bagel. Random? Yes. Just what I wanted? YES!
I also heated up some canned green beans – you all know how I feel about those!
Winner, winner, pork tenderloin dinner. Fast, easy, inexpensive and scrumptious!
Sooo – those cookies I’ve been making this week? Here they are!
They’re to go in the welcome baskets that will be in the hotel rooms of the guests who are coming to our friends’ wedding this weekend!
Their wedding colors are the quintessential “Fall” colors – espresso, deep orange, mocha & burnt red.
Well, I’m off to go hang out with the couple that’s about to be hitched, and deliver their cookies – hope they like ‘em!

Mine’s the original Betty Crocker Chocolate Chip Cookie recipe from the book they had in the 70’s-ish. They altered the recipe in the newer additions and it is just NOT the same!!
