Good morning everyone – Happy Monday!
I’m so nervous – I could not fall asleep last night! It was one of those things where you’re laying there and you can tell you’re not fully awake, but you’re not fully asleep either. I don’t know if I fell completely asleep until after 12 and for a nervous nelly like me, who NEEDS it least 7 hours a night – that is slightly terrifying. Do you ever those kinds of nights? There’s no rhyme or reason as to why they happen, I feel!
Tired or not, I got up for my morning Mom walk and I am so glad I did – it is gorgeous outside! It’s actually supposed to get up to 68 degrees today…can you imagine?! It was especially nice to get out today because it rained 3 out of the 4 days we were supposed to walk last week, so I hadn’t got any good face time with my Mom in what felt like forever
Breakfast was a repeater of Friday’s gem – a Banana and Almond Butter Sandwich with a Honeycrisp Apple.
This may, or may not, be the straightest banana I’ve ever eaten…
A Honeycrisp was perfect for dipping up all the extra almond butter!
And I am so excited for lunch you guys. I made a Pickle Salad. I love pickles!
We’ve got:
- Romaine lettuce
- Sliced deli ham
- Sliced pickles
- Carrot chips
I also packed a Blueberry Buckle Yogurt.
Did you know a Blueberry Buckle is a single layer cake studded with blueberries and topped with a streusel topping? I’ve never had the real thing, but it sure makes for a tasty yogurt!
In other news, remember a couple weeks ago when I had that horrifying bug encounter? Afterwards, my friend Joe told me that he and his wife use Hedgeapples to repel the creepy crawlies. I had my Mom pick some up for me at the Farmer’s Market this weekend. Aren’t they crazy?
Today I’m going to plot out as to where I’m going to place them around the house. Maybe a hedgeapple a day will keep the bugs away?

What are you looking forward to this week?
I’m looking forward to some great weather, possibly a haircut later in the week, a breast cancer Walk for the Cure walk next weekend (am I already thinking about next weekend?!) and some VERY special dinners made by someone near and dear to my heart!

I had the same problem last night! I kept shooting up out of bed and grabbing some water. I was really alert, but super tired. Strange. That is the straightest banana I’ve seen for sure. Love the nut butter in between it!!!
This week I have a lot of school work to get done, so I’m not looking forward to that. BUT I am looking forward to some good dinners and some baking going on. Also this coming weekend I have fun things planned with friends.
I had sleeping issues last week. It’s weird because my body was exhausted but my mind wouldn’t let me sleep…. ugh….
I’m actually looking forward to some warmer temps this week. It’s like we just skipped fall and jump straight to winter?!?!

Those hedgeballs DO work! However, as they decompose they make a mess! My husband put little pieces of aluminum foil underneath them to keep things clean! Good luck!
I potty trianed my son last week (maybe). He is almost 2 1/2. I am looking forward to seeing if it “takes”. Ugh!
What kind of dressing do you use on that salad? It looks delightful. Also, hedgeballs are especially great at keeping out the spiders. But they are poisonous so be aware of that if you have pets. I saw them in the Dahl’s produce section the other day.
Those hedgeapples are wild! This week I am looking forward to baking my first batch of pumpkin bread of the season. Yesterday I realized that I had all but a couple ingredients to make it, so I got really excited!

I hate nights like that! You can’t tell if you ever got to sleep…you wake up feeling like ti never happened…terrible.
I’m looking forward to warmer temps (60′s as oppsed to lasts weeks 40′s), lunch at Panera tomorrow…and asking the big boss for a raise. GULP.

Other than that, this week is a little stressful–midterm, essays, babysitting in between, and a required “Italian Extravaganza” that my teacher wants me to sing at. I love performing, but I’m not particularly excited about this party because I’m required to go for credit.
And blueberry yogurt is the BEST! I recently discovered it.
You’re salad today has inspired me to do something similar for my lunch on Wednesday! So now I’m excited for that!
Try melatonin tablets – they can be purchased at Walgreens or any drug store. It’s a natural hormone that regulates sleep. I take one or two whenever I need to get a really restful sleep. It is not habit forming and has no adverse side effects. Much better than diphenhydramine, the antihistamine which is the active ingredient of Sominex and Tylenol PM.

I lately have been having trouble sleeping at night. I am working at getting back to a regular sleep schedule because I’m SOOOO tired.

Ooops I forgot to tell you what I’m looking forward to. Really I’m looking forward to this week being over. It’s super packed and I don’t know how much rest I will get.
But I’m super excited that my PT told me that I can run 5 minutes a day before my next appointment. So fabulous!

PICKLES ROCK! Really, I could eat them everyday and be one happy little gal. I LOVE adding them to my salads too.
And, I must say, these yogurts you have are quite indulgent sounding. Wish we had some around here because I would be in yogurt heaven with Blueberry Buckle.
