Good afternoon everyone!
Family Day has been great so far.
Ben and I headed over to my parent’s house for lunch around 12:00. Check out what they had laying around – Strawberry Filled Candies! Do you remember these? They’re hard, strawberry candies filled with strawberry…goo? I used to eat them as a kid, so I had a couple as a nostalgic treat. They were just as good as I remembered.
As for the rest of the meal…let’s just say I’m glad I got that workout in this morning! We had Cheesy Lasagna Rollups for our main course.
These were individual lasagna sheets rolled up with all the classic lasagna ingredients, topped with toooons of cheese and baked. It was just as good as it looks!
We also had some fresh, Roasted Almond Green Beans.
I love my Mom’s green beans. She simply steams fresh beans, then adds a little pat of butter and roasted, sliced almonds. The different textures are fabulous!
There was also some Parmesan Garlic Bread for mopping up every last drop of lasagna. It had just been baked this morning and was perfectly pillowy and scrumptious.
Now, we never had dessert after meals in my house growing up. But ever since all of us kids have flown the coop, we get it after every meal. Maybe they’re trying to lure us back home?! It’s working!
After lunch I was able to get several loads of laundry done, and pre-make TWO dinners for this week. What luck.
Off to eat dinner at Ben’s parents house…I’m still stuffed from lunch!
