Gooood evening, all!
PHEW – loooong day. Long Day. I’m so glad I got that workout in this morning, because I don’t think a trip to the gym would have been in the cards tonight!
I didn’t end up needing a snack this afternoon, but I could have used a nap in between meetings! Exercising in the morning is definitely great in terms of starting your day off right, but it certainly leaves a sista’ feeling tired! I think it’s something you need to do several times to get your body used to. Fortunately, I’m willing to work towards that, so look for more early morning workouts to come this winter.
Given my long day, I didn’t really feel like cooking up anything big tonight so I channeled my girl Lauren, and made Breakfast for Dinner!
I cracked up some eggies…
And made Scrambled Eggs, Bacon & a Toasted Honey Wheat Bagel. Can you say comfort food?
For perfect scrambled eggs, whisk together one whole egg, two egg whites and S&P. Cook until they’re just done and top with more freshly cracked pepper.
Add a toasty, squishy, Honey Wheat Bagel and some crispy, center-cut bacon…
And you’ve got a no-fuss, ready in under 10 minutes, soul-satisfying dinner! This seeeriously hit the spot. Add in Ben doing the dishes, and my crazy day has found its perfect ending.
Oh wait, that perfect ending will come after dessert…Cornbread!
I’m off to go relax and review some notes…I have to give a speech tomorrow morning. In front of people. Freaking.

And, the scrambled eggs look super yummy. I just heard on Foodnetwork that most people think adding a lot of milk to your eggs makes them more fluffy, when actually, it does the exact opposite. You really shouldn’t add milk to scrambled eggs…hmmm go figure!
Glad you had a great workout this morning and I hope you get a chance to relax and unwind tonight. Maybe you’ve restocked on Pumpkin Ice Cream. I did and I am thanking the Lord I did because it’s calling my name!

I hear you though, I freak out for days (ok, maybe weeks) before I have to speak in front of people. So weird though if you think about it. We do it everyday. Maybe it is just all the attention and anticipation?

Another vote for “Great Minds” – we had pancakes and bacon for the evening meal tonight too. BTW – with a farm background, the evening meal has always been supper for me. Dinner was at noon and lunch was in the mid-morning and mid-afternoon. Just sayin’.
Your dinner looks so comforting! I hear there’s a vegan tempeh bacon. I may have to snag some to recreate this comfort BFD.

Looks like you like just about as much pepper on your eggs as I do, yum! I have to give a presentation in front of a group (including Executives) tomorrow morning too… feeling the anxiety as well

I actually prefer mine over medium if I’m going to eat a whole egg. Just runny enough for one piece of toast but not solid yolk.
