Cooking for Two

Good morning all!

TGIF and TGIHTDO (thank goodness I have the day off!)

It’s true – Ben is heading to Nebraska this afternoon to go to the Nebraska vs Oklahoma football game tomorrow, so I took the day off to keep him company before he goes! I know…the sacrifices I make… ;)

I sliced up a BIG Honeycrisp Apple sprinkled with Cinnamon to eat while watching the Today Show this morning.

One of my favorite things to do when I have the day off is sleep in a little and then watch the Today Show. It just says “day off” to me! :)

I am actually stuffed right now…this Honeycrisp was seriously half the size of my head!!

Oh, a couple of people have asked how big the baking dishes are that I make my baked oatmeal in. Here they are compared to a can of beans.

I believe the dish on the right was part of a Corningware set we got for our wedding, and the dish on the right was part of a Rachel Ray “cooking for 2″ set. This set would be similar.

Since it’s just Ben and I in the house, it’s nice to have these smaller dishes to make personal sized casseroles and such. Cute!

Agenda for day off:

  • Gym sesh with Ben
  • Help fertilize lawn for the winter (well, mostly just watch)
  • Maaaaaaaybe bake?!
  • Get outside – it’s supposed to be 70 degrees today, wheee!

When’s the last time you had a day off? Do you use them to get stuff done, or relax?

I always have the best intentions of relaxing…but then you start noticing all the stuff that needs to get done and it’s hard not to get up and do it!

    So jealous that you have the day off! Enjoy it! I’ve recently taken days off to travel somewhere, but can’t remember the last time I took the day off to just enjoy being at home and be productive. Hmmm…I think I need one.

    Love days off! I used to have every other Friday off (flex schedule) and that was really really nice – I would use it to go to my fave kickboxing class at the gym that I normally wouldn’t be able to make bc of work… also to get grocery shopping done (no crowds on Friday!) and other such errands. Had to switch off that schedule bc of changes in job duties, but I do miss it :) We have next Wed off for Veteran’s Day — I’m excited for a nice break in the week!

    I’m so exciting that I have the afternoon off. We have a nice recognition program at work where we can nominate co-workers for the nice, helpful tasks they do and the winner gets Friday afternoon off. I won this week! I’m not sure what I am going to do with my unexpected afternoon off but I am thinking I’m going to head downtown, get a warm and toasty soy latte and window shop!

    Usually I take vacation to travel or spend time with family, but I do love being able to sip my coffee and watch morning TV. It’s also great for getting things done at businesses that have the same work hours as you.

    If you count my Vegas trip, that was it! Haha, but my last day off where I could just chill at home was fall break. I recorded some music, read, played on the internet, had my birthday and spa day. It was wonderful to relax and do what I wanted! Hope your day off is fabulous!

    I had last Friday off. I love having Friday’s off, the weekend feels so much longer that way!

    I used my day to catch up on stuff at home. That way I had the weekend to relax and do whatever I wanted.

    Well I get weekends off, does that count? I can’t really ever just take a personal day…bummer. But when I am home on weekdays I like to get up early, drink coffee, watch tv and watch all my neighbors get up and drive off to work while relishing in the idea that I don’t even have to shower if I don’t want to!

    You know that Disney cartoon “Hercules” where they jump and say, “Her-cul-es, Her-cul-ees, Her-cul-ees!!!”? Well, that’s what I’m thinking with your butternut squash ravioli: “Re-Ci-pe, RE-CI-PEE, RE-CI-PEEE!!!” ;)

    I love butternut squash but have extra Libby’s pumpkin (regular) so I wanna try to make pumpkin ravioli. Holy YUMMERS!

    I took Monday off because I was so stressed and about to explode at a client. I slept in, went to the gym, grocery store, made apple crisp and cleaned the house. It was a lovely relaxing day.

    Depends on how you define a day off! Day off from my mom job? Uh, never! lol Actually I consider a day we don’t have to leave the house a day “off”, and I always have intentions of getting lots of stuff done, and always manage to waste it doing a lot of nothing. Maybe I need to plan to relax all day, then I’ll get something done?

    Wonton wrappers are going on my grocery list so I can make those delicious ravioli! But, where do you find them in the grocery store? And what could I use to substitute if I can’t find them??
