Hey-o! How’d your Friday go?

Talk about the perfect day…

  • Insane workout
  • Good eats
  • Leisurely afternoon
  • 70 degree weather!

Seriously – it is June up in here! I had all the windows and doors open this afternoon to let the warm breeze in. It was the cherry on the day-off cake. ;)

But let’s start with that workout! About an hour before I went, I had a CherryCashew PURE Bar. Perfect fuel for a grueling workout that was inspired by…

Weekend Challenge: 3 days/3 hours of cardio. 1hr of ANY cardio every day. Run, hike, spin as long as you sweat AT LEAST 3hrs this weekend!

Who wouldn’t want to drive straight to the gym and crank out an amazing, hour long workout after reading that? I did. :)

  • 10 minutes elliptical @ level 5
  • 10 minutes treadmill @ 6.5mph
  • 10 minutes treadmill @ 7mph
  • 5 minutes treadmill @ 4mph
  • 5 minutes treadmill @ 7.5mph
  • 5 minutes elliptical @ level 4
  • 5 minutes treadmill @ 6.5mph
  • 5 minutes treadmill @ 4mph
  • 5 minutes treadmill @ 7mph
  • Total: 60 minutes!

I was a sweaty mess when I left – semi glad that it was the afternoon and not a lot of people were there/it was just older ladies and gentleman getting their afternoon walks in… :)

When I got home, I made a beast of a salad for lunch.

It was basically the crunchiest salad I’ve ever made. I find that crunchy things are generally more satisfying to eat. Much more annoying for the people in the general vicinity…but much more enjoyable for the chomper. :)

In the mix:

  • Baby carrots
  • Feta cheese
  • Braeburn apple
  • Cucumber

I peel and seed my cucumbers. The seeds just water down my salad, which doesn’t fly with me. How about you?

The rest of the afternoon involved some laundry, vacuuming and indulging in a Project Runway Season 2 marathon. I’d never seen that season!

Yep, that one! I totally thought Santino should have won, btw…

Aaaanyways…

Dinner tonight was quick, easy and satisfying…Pancakes!

I used my Hungry Jack Complete Wheat Blends pancake mix. All you have to do is add water – sweet! I jazzed it up by adding some cinnamon and vanilla extract.

Nothing fancy – but certainly delicious!

Well I am seriously exhausted from my workout today. I feel like going back and forth from the elliptical to the treadmill really optimized my heart rate and workout efforts = I’m ready to snooze! Which is what I shall be doing circa 9pm tonight. :)

Tomorrow morning I’m off on a little road trip – any guesses as to where I’m heading?!

  8. I wanted Daniel V. to win that season. It was my kind of clothes.

    What I planned on this weekend and what I’m actually doing are two different things. I planned a run and some shopping and Roman Holiday at the local college. Instead I’m sick on the couch praying it is over quick. Hunni gave me his flu.

    I’m following Bob too! I just barely finished his challenge today. Friday I did an hour of the elliptical, yesterday it was an hour walk (down to the post office and back since I was without a car), and today it was my 90 minute yoga class that never fails to kick my butt. How did the rest of the challenge go for you?

    And wheat pancakes are the bomb! They look so yummy! And you’re right crunchy salads are the best =)
