Tailgating Under the Moon

Good evening everyone!

How was your weekend? Mine was…crazy good! 8O

In case you don’t watch college football, Iowa lost. :( I know – I’m so sad that their winning streak had to come to an end AND our quarterback got injured. BUMMER! Fortunately, tailgating under the moon a lot of fun!

My parents and I got there briiiiiight and early – we set up shop at 7:30am and the parking lot was already full and bumping!

I kicked things off with a Bloody Mary. My Dad makes a meeeean bloody mary – they’re his specialty!

The food spread was also intense and included one of my favorite treats…

Candy Corn and Honey Roasted Peanuts! I had about 26 handfuls. I actually don’t love either thing by itself, but together they are one crazy-delish duo. :)

The main dish was Boil-in-a-Bag Omelets and Hashbrowns. My Dad played grill master. He did a great job!

These boil-in-a-bag omelets are genius! All you do is combine eggs and any topping you’d put in a normal omelet: peppers, mushrooms, cheese, ham, onions, etc. in a plastic ziploc bag, boil in a big pot of water for 10 minutes…

And viola! No clean up and a perfectly fluffy omelet – awesome! I had a few bites of my Mom’s…I was too busy eating candy corn and peanuts…

Soon enough – my girlfriends arrived! Kickoff was at 11am and we didn’t have tickets, so when my parents shut down the tailgate to head to the game, we headed to the bar to watch.

Even though the team lost, I still had a great time with my family and friends. There’s always next week!!

Off to go to dinner with Ben’s parents – Mexican is on the menu!

    I love authentic chicken tortilla soup. I’m not a big taco or burrito lover, so besides that I usually get sides of black beans and guac

  4. At mexican I love the chicken fajita burrito with a smidge of cheese and guac. There is a little place around here that makes it best.

  5. I bet the candy corn and peanut combo IS delicious. I would have never thought of that!

    Awww you look so cute! :-) That does sound like a killer combo – I tried regular peanuts with candy corn, but honey roasted? Yes please!

    Mexican is one of my faves! At a restaurant, I typically go for the taco salad minus the shell. All of the great burrito innards in salad form!!

    I’ve had that candy corn-peanut mix with salted peanuts, but never honey roasted, that sounds delish! The mix is also yummy when you throw in some m&m’s or chocolate chips too.     We have a great Mexican restaurant in our little town. I really like their taco salad with chicken!

    Looks like a great time in Iowa City! Is the quarters photo at Brothers? It looks like it, but I’m not positive. . . haven’t been there in several years! I’m surprised I’m questioning myself, considering I pretty much lived there Fri/Sat nights for several years. . . granted, they were hazy nights. . LOL! ;)

    I’m totally going to steal the omelet in a bag idea! LOVE IT! We went to Granite City today for lunch–had the Cuban, since you were talking about it on the blog. It was delish! ;) Thanks for the idea!

    Mexican food–I’m all about the enchiladas!!! No refried beans for me, though–not a fan!

    Chicken Fajitas!!! It comes with garlic butter sauce to dip the chicken in! So bad, but so good!

    ive always been interested by the in-the-bag cooking but i steer clear because im worried about harmful chemicals leeching out of the bag. have u heard anything about this?

    Sounds like a great time! I have never thought about boiling eggs in a bag–and I can’t wait to try them! (Tomorrow, probably!) Cleaning the pan is definitely the worst part of it…. ;)

    I like to get “Camarones a la Diabla” when we go out for Mexican food! Basically grilled shrimp with green peppers & onions in a spicy tomato sauce served with rice, sour cream, etc… Yum!

    My weekend was awesome! I’m glad you had a fab one, too. The tailgate looks like fun! And that candy corn + peanuts combo looks delicious! I’m a huge fan of candy corn + pretzels, so I’m sure I’d love the sweet/salty peanuts combo as well :)

    what a great idea with the eggs, i would have never thought to do that! i love the no clean up.

    Mexican is my favorite, usually i get so full from the chip and salsa that i don’t even order a meal, but i do love quesadillas so much!

    Is that a pickle in your Bloody Mary? If so, GENIUS.
    I usually order veggie fajitas, a bean burrito without cheese, or a taco salad with beans instead of meat. Plenty of guac on all!

    shoop girl…this is why i love the midwest right here. tailgating just does not get any better. and those omelets in a bag are GENIUS!!!

    as for mexican food, i love my fajitas and burritos!!!!

    Just a sidenote about the boil-in-bag omelets..we used the FREEZER bags…not regular. Tried the regular at home and they melt before the eggs are done. As far as chemicals, they are not in the bag that long and have never heard any harmful effects from the plastic-idea is similar to the veggies or rice you can buy in bags at the store that are already in the bags to cook.

    Looks like a blast! We saw the same dogs! We have a tailgate behind the stadium and they walked past us several times. The dogs were incredibly content with the glasses on, it was adorable!

    Glad you had fun…and there is still Rosebowl hope!

  27. I usually find something on the menu and stick with it for years. It used to be cheese enchiladas when I was growing up, then bean & cheese burritos, in HS it was rolled tacos w/ guacamole and now I LOVE spicy potato burritos w/ sour cream. Yummy!

    This post made me think back to my days tailgating in Iowa City. My roommates and I would get up at 6 a.m. and walk over to Kinnick. I don’t know how my liver did it!
