Good morning everyone!!

It’s another beautiful day here in Central Iowa – seriously, where is this weather coming from?? It’s supposed to be sunny and 64 today…I can deal with that. 8) Is it nice where you are?

After a sweaty morning Mom walk, I translated one of my favorite snacks – apple slices and almond butter – into breakfast, and made Apple & Almond Butter Oatmeal!

In the mix:

  • 3/4 Braeburn apple (peeled, chopped & nuked for 90 sec.)
  • 1/2 cup old fashioned oats
  • 1 cup water
  • dash of vanilla & cinnamon
  • scoop of almond butter

Not the prettiest bowl on the block, but super thick, hearty and tasty. I sprinkled the top with a little pumpkin pie spice. The nutmeg in it was reeeally good! :)

Lunch is leftover Mexican - yes!

We’ve got 3/4 of a Bean Burrito and 1/2 of a Cheese Enchilada. Both doused in red sauce and 100% delicious. I think stuff like this tastes even better the second day.

I also packed some baby carrots for freshness.

Time to head to work…although I feel like I just left! Sometimes after a weekend like mine, you need a break from your break. Know what I mean?!

  2. I love hearing you weather reports, you’re about 2-3 days ahead of the east coast. For example you’re Friday was 70, we felt that yesterday and today! It also goes the other way…your last rainy day was our Halloween :(

  6. I love Jillian and I totally agree. After watching Food Inc I’m more resolved to buy organic when we can afford it. Sad how food isn’t really even food anymore.

    I’ve noticed that a lot of leftover mexican dishes do get better! How weird.
    Thanks for posting Jillian’s interview! I really adore her… I think I’m really starting to idolize her. I think organic probably is the best way to get a “healthy” body but the expenses that come with it are insane. Plus in this world where chemicals run rampant through our foods, it’s hard to stay away from it all. What are your thoughts on it?

    It’s gorgeous here in MO too! I heard about people putting up Christmas lights while wearing shorts this weekend. That’s almost unheard of for here!

    Ok, I admire Jillian as much as the next person, but I don’t really agree with her on organics. I believe eating more real, whole, minimally-processed food, organic or not, is much, much more important than eating more organic food. I do NOT believe that non-organic food is dangerous or chemical-laden. I say this because I work in agriculture (dairy farming specifically), and from my years of experience (basically my whole life), all farmers are dedicated to efficiently producing safe, healthy, wholesome food. In fact, farmers must follow strict rules on the use of herbicides, antibiotics, etc. or risk not being able to sell their products. For example, if we treat a sick cow with antibiotics, we are required to throw her milk away for a specified number of days to ensure that the antibiotic is not going into milk that people will drink. These rules were created and are enforced by the USDA to protect consumers. I hate that so many people feel guilty about not being able to afford organic, when non-organic is just as safe and wholesome, and much less expensive! I could go on for days, but I’ll leave it at that. :)

    That said, I do purchase a few packaged products labeled “organic” because the taste, quality, and nutritional stats are often better than “regular” products, i.e. fewer ingredients, less sugar, more fiber etc. I’m also interested in your thoughts on the subject!

    That is an interesting article. I mean she knows what she is talking about, but eating clean is very difficult. I think everything in moderation is key. You have to indulge every once in a while. But I agree with what she has to say.

    I LOVE mexican. I’m a pretty big believer in organics especially since I watched Food Inc! Your tailgating looked delish. Perfect tailgating foods.

    To me, organic is important. I’m concerned with the amount of pesticides in my foods that I eat, and sometimes I think that the level of pesticides is somehow related to outbreaks of canker sores. I suffer from them, and get them often, but when I switched to eating more organic foods, the sores themselves disappeared. Maybe it’s just not the way it is, but that’s what I think. It’s not just the pesticides, but the other crap that goes into it. If I can’t pronounce the ingredient, why eat it?
