French Dip a la Crock Pot

The crock pot strikes again!

Tonight it greeted me with French Dip Sandwiches – wheee!

Ok, it was an 80/20 effort – crock pot/me. :)

Last night I trimmed all the fat off of a 2lb chuck roast and cut it into big hunks. This morning I added it to my crock pot with the following:

  • 1 packet Lipton Onion Soup mix
  • 1/4 cup balsamic vinegar
  • 1/2 cup water

That’s it! Put the lid on and set that baby to cook on low for 8 hours.

After work I removed the roast from the juices, shredded and set aside. Then I strained the juices and let them simmer in a small pan with ~1/4 cup of water until it thickened up a bit – ~3 minutes.

Fat skimming trick: run leaves of lettuce through anything you’re trying to skim the fat off of. The fat will stick to the lettuce leaf, which you can then throw away!

Toast up a sesame seed bun, add your shredded roast and finish it off with a slice of mozzarella cheese. Finally – get yo’ dunk on! :D

For maximum yum, snap the ends off a bunch of asparagus…

Drizzle with some extra virgin olive oil, salt & pepper…

And roast for 12 minutes in a 425 degree oven.

  2. My favorite things for crockpot is Chili and Soup. Makes it so much easier than simmering for hours.

    I like anything in a crockpot! Recently I did a pork shoulder in the crock pot and had pull pork sandwiches! YUM!!

    You give me so much inspriation to use my crock more. I usually use this equipment for soups, chilis and applesauce, but I have heard that you can cook just about ANYTHING in a crock pot. I actually saw a recipe for a Pumpkin Cobbler in a slow cooker. Sounds fantastic right?

    I need to plan ahead better so I can make better use of my crockpot! I use mine mostly for chicken & beef dishes. I tried french toast once, and it was a big FAIL.

    This crockpot recipe looks great! I love using the crockpot to tenderize otherwise “blah” cuts of meat… makes them so perfectly yummy and economical :)

    I love my crock pot! There is nothing better than coming home from work to an already cooked dinner. My favorite thing to make is buffalo chicken. It’s super easy and I use it in all kinds of ways.

    I tried to make a cake in my crock pot once. I followed the directions but it was horrible!

    Any type of roast will do but I prefer Cross rib roast or Prime rib roast
    1 pkg. Knorr Oxtail soup mix
    Salt pepper
    ½ cup water
    Ingredients for the leftover Roast beef
    Club House Spaghetti seasoning mix
    Sweet and Sour sauce
    Onions
    Sweet peppers, zucchini, mushrooms
    Frozen mixed vegetables
    Salt pepper
    Coat roast with Knorr soup mix on all sides. Add salt and pepper and water. Set crock-pot to high. To go with this I usually make mashed potatoes and boil peas. The gravy from the roast is great on the potatoes.
    With the leftover roast you can:
    *Cut up into ‘French fry’ size and freeze for use later in a stir-fry. I add zucchini, mushrooms, onions and sweet peppers. To this you can add a sweet and sour sauce about 15 minutes before it is done. If you do not have fresh vegetables a frozen vegetable medley is also good. If you don’t want to use sweet and sour sauce you can season with the spaghetti seasoning mix, salt, pepper etc…or any of your favourite seasonings. Fry in pan with butter and a bit of olive oil.
    *Cut up into ‘French fry’ size and keep in fridge or freezer for a later date. Also save the gravy. I usually heat up the roast in the Rival electric frying pan with the gravy, you can add onions and peppers, and spaghetti seasoning mix and any other seasonings you prefer. Then I pour it over boiled rice.
    *I save some of the roast beef slices for sandwiches and wraps for the kids’ lunches. My son’s favourite sandwich is roast beef made with mayonnaise, mustard, pickles and salt and pepper. I like wraps made with homemade Caesar salad dressing and warm roast beef.

    I make a very similar roast for french dips — in addition to the ingredients you listed here, I add a bottle of Michelob beer and sliced onions. The beer adds such a unique taste and the onions are great to have on the sandwiches!

    I know this an older entry but you are so awesome for postiing this. That is my bf’s favorite meal , well aside from the asparagus. He ALWAYS orders this everytime its on the menu.
