Yes my friends, nothing quite tops the list of my favorite things like a big, warm bowl of Chicken Tortilla Crock Pot Soup!
Chicken Tortilla Crock Pot Soup
Adapted from Allrecipes.com
Serves 6
Ingredients:
1 14.5oz can petite diced tomatoes
1-14.5oz chicken broth
1-10oz can red enchilada sauce
2 cups water
1 can black beans, drained and rinsed
1-4oz can diced green chilies
1/2 medium onion, chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon dried cilantro
1/4 teaspoon hot pepper flakes
1 bay leaf
Salt & pepper
1-10oz package frozen corn
2 small chicken breasts, cooked & shredded
Tortilla chips & shredded cheese
Directions:
1. Place ingredients from tomatoes through frozen corn in a large crock pot and cook on low for 6-8 hours. Add shredded chicken for last 30 minutes of cooking.
2. Crumble several tortilla chips in the bottom of a bowl. Top with soup, more crumbled tortilla chips and cheese. Enjoy!
It doesn’t get much easier, tastier and soul warming than this! You literally drop everything into the crock pot, come back 7.5 hours later and are completely ready to eat!
The ingredient list for this soup may look long, but take a closer look. I bet you have most – if not ALL – of these ingredients in your kitchen at this very moment.
Ben recommended that we get these Santitas Tortilla Chips for thickening up and topping the soup. They are very “authentic” tasting, have minimal ingredients, no preservatives and are trans fat free – wheee!
Like the chips, this soup is very “authentic” tasting. You can taste the fact that it’s been simmering away all day and is perfectly smokey, savory and satisfying. It even got a “best chicken tortilla soup you’ve ever made” award from Ben!
Another one of my favorite things…Chips & Salsa. Oh yes…
It has to be locally made, Graddy’s All-Natural Salsa, though. It’s the only store-bought salsa that is allowed to enter my mouth via chip. Everything else is not worthy I’m telling you!
Ben and his family introduced me to this salsa and I just love how fresh and chunky it is. Not the bottled, commercial-salsa chunky though. These are big, recognizable chunks of fresh tomato, cilantro and jalapeno!
In the spirit of “back on track week, ” I portioned out a few tortilla chips and had them for “dessert.”
The rest of my night, unfortunately, will involve a few of my non-favorite things such as…
Shooing away the nirds that are trying to make a nest on my front porch. Can you spot them? There’s two!!
Paying some bills.
And laundry!
You know…stuff that makes the world go ’round.
The night is not a complete wash though. Gossip Girl is on! The Parents Television Council had good reason to be in a tizzy last week – it was scandalacious!

OMG. That soup will be what I cook this weekend for a cache of weekday meals. Yay! I might forgo the corn though. Not a big fan.
One of the things I miss MOST about living in the midwest is local Mexican food available in the supermarket. Those chips ARE the best! We used to eat them all the time with Margarita brand salsa in Kansas City.

I made this last night and it was delicious! I didn’t plan ahead enough to do it in the crockpot, so I just made it stove top. Thanks for the inspiration!
I know this is late, but I added a few (5) diced-up corn tortillas to this soup along with the other ingredients at the beginning and it had that “enchilada” aroma and taste as they cooked down. Thanks for the recipe!
