Oooooomg. Dinner tonight = bliss. It’s been stamped. I freaking loved it. It was that good!
Balsamic & White Wine Roasted Vegetable Pasta
Ok!
I started by making some Roasted Brussels Sprouts and Broccoli in the oven.
While the veggies were roasting, I cooked some Ronzoni Smart Taste Penne Pasta.
I love this pasta because it’s got added fiber and calcium…
and 6 grams of protein per serving is bomb! Plus it tastes really good.
While the pasta was cooking, I chopped up one onion with my Pampered Chef Quick Chop. Fun Fact: I actually LOVE to chop food with my favorite chef’s knife, but sometimes, you’ve got things to do…know what I mean?!
I only needed ~1/8 of an onion for this recipe, but whenever I am chopping an onion, I process the whole thing and store whatever I don’t use in a freezer bag in the freezer. That way, the next time I need some chopped onion, it’s all ready to go!
Next I sautéed the onion and some salt & pepper in 2 teaspoons of olive oil, in a skillet on medium-low heat. Five minutes later, I added 2 chopped garlic cloves and stirred constantly, cooking for another minute or so.
Then I went around the pan twice with some Two Vines Sauvignon Blanc.
This is your average white wine – but I dug it! You should never cook with a wine you wouldn’t drink, as the flavor gets concentrated as it cooks. Therefore, a taste test was necessary. I obliged
In addition to the wine, I added a splash of balsamic vinegar and 1 Tablespoon of butter to the skillet. Let this bubble away on low for about 3 minutes, or until it gets slightly thickened. Don’t be scared – cooking with white wine is a breeze!
By this time the pasta was just about cooked, so I swiped a little cup of the cooking water and hydrated some sun-dried tomatoes for a couple minutes.
Finally I drained the pasta and sun-dried tomatoes, and added it back to the pot with the roasted veggies and balsamic white wine sauce. Stir & serve!
I CANNOT express to you how much I love roasted brussels sprouts!! I could have eaten ALL of them!
The garlic, onion, white wine and balsamic vinegar combo was just insane. This light sauce was a terrific pairing with the crunchy, roasted veggies. Try this you guys! It’s no fail – promise!!!
